Diced chicken thigh fillet - please inspire me!

Have a bag of this in the freezer and am sure there are lots of quick suppers I could do with it - but am out of ideas. Any ideas gratefully received.

I'd marinate the diced chicken in lemon, garlic and rosemary and then sautee and serve with onions, red/yellow pepper etc.

Try Thai Green Chicken Curry. Heat up some coconut milk and a tablespoon of Thai Green Curry Paste in a wide pan. Add the defrosted diced chicken and poach for 4 - 5 minutes. Then add some small broccoli florets (which take longest to cook) for another minute or two, courgette slices next for a minute and then finish with some trimmed sugar-snap peas. Heat through and serve over cooked rice.

Hi, here I am reporting back, we had the www.mumsnet.com/Recipes?call=RecipePage&pid=2769 I used condensed chicken & white wine soup and some milk, it was a bit bland but bubsy cleared her plate and that was the main objective, so job done! I made enough to freeze, so we will have it again next week. The potatoes were the best bit, I put mozzarella on top.
Thanks for starting this thread, I will be trying the other ideas on here, always looking for quick easy midweek chicken recipes. Thanks all.

I've made this a couple of times and it's very good. I make one big pie instead of individual ones.
