Ingredients

4 chicken thighs / 3 chicken breasts ( diced)
1 large onion
2 leeks
potatoes
herbs ( of your choice)
I x can of leek and potato soup
little bit of stock (if necessary)
grated cheese
White wine (optional)

Handy Hint

You can make extra of the chicken / leek concoction than needed and freeze it for another day.

Method

Soften the leeks and the onion in a little olive oil.
Add the chicken and brown through.
Add the CHEAT .... a can of Leek and potato soup, and a hint of white wine ( reserving the rest for later)
Adjust the seasoning by adding herbs, salt and pepper.
Let this cook together for a while adding veg or chicken stock as necessary.
Meanwhile peel and thickly slice enough potatoes and par boil ( about 8 minutes)
transfer the chicken / leek concoction to a deep baking dish and top with a generous layer of the potatoes finishing with a good dollop of the grated cheese.
Pop in the middle shelf of a moderate oven ( as opposed to a rampaging one !) gas mark 5 / 160 for about 15 - 20 mins

substitute the chicken for quorn pieces or fillets makes this a yummy veggie recipe. I found the 'finish contents of wine bottle' the most useful tip on this recipe!

The older children can help with cheese grating and prep. My 5 year old likes to arrange the potatoes on the top and put the grated cheese on - only half as much as I grate however as she eats most of it ! Serve with steamed veg of choice - or roasted veg in the winter.
