Just wondered if anyone had some recipes for pasta and rice salads.Trying to cut down on bread and would like ideas for salads that keep a couple of days in the fridge please.

I think they are both losers tbh. You can do loads of nicer stuff with other grains and pulses. Got to go,but will give you a few ideas tomorrow.

Pasta salad with borlotti beans and feta cheese:

For a fair-sized bowl:

250g pasta
chunk of cucumber (about a quarter)
6 spring onions
200g (half a can) of borlotti beans
100g feta
Mayonnaise

Cook and drain the pasta and cool it with cold water.
Chop the cucumber into small chunks, slice the spring onions and cube the feta if it's in a slab
Mix all ingredients together, add enough mayo to coat all the ingredients and season.

Pasta, tuna and sweetcorn salad:
Cook 250g pasta and some sweetcorn, drain and cool with cold water. Add flaked tuna (200g can). Add enough mayo to coat the ingredients and season.

Moondog, pasta is made from wheat too but it has a much lower GI than bread.

We are really lazy and buy the various microwave pouches of rice and add diced cucumber, salad and meat to it, the mediterranean tomato and the mushroom ones are my favourites and they're usually on offer.

oops my children are 2 and 4 so always looking for healthy alternatives.I am quite lucky that they both like salad and veg.

My ds loves gardening and is currently growing his own new potatos and tomatos.He has also set up a herbpatch with dh so plenty of parsley etc available.
Agree with you saying you will be at a loss without ds,I am always thinking how nice it would be to have some time to myself then when dh takes them both out I am constantly looking out of the window for their return,it's too quiet without them believe it or not!!!!

Are you interested in other salads?

If so grated carrot, OJ (& segments if you want) and sultanas or raisins

Potatoe, frankfurter and mustard mayo

Rice - peppers, sweetcorn, sultanas, mandarins (with a vinegarette)

Pasta - peppers, sweetcorn, tuna & mayo

You can also add raw onion to the frankfurter one (but it's only OK for 2 days)

fusilli
pesto
cream /crem fraichje/mayo(v.small amount)
red or spring onion
chicken
bacon (small peices crispy)
peppers(cooked or raw)
croutons (optional!)

pasta and pepper salad

roughly chop peppers (any colour, I usually do 2 or 3) and cook in the oven until lightly charred.

chop some onions and lettuce and sprinkle with garlic and balsamic vinegar (as much or little as you like)

mix peppers with onions and lettuce and add cooked pasta.

Tastes lovely hot or cold.

for rice salad make a simple lemon/ garlic/oil(flavourless if poss)dressing with saffron in it
add to rice and veg(eg peas sweetcorn peppers mushrooms shallot) season and leave in fridge over night srve at room temp

warm sausage and potato salad (wicked salad my fave)
new pots
good sausage
lightly oven roasted peppers and red/spring onion(large chunks) maybe cherry toms too
cos lettuce
honey and mustard dressing
mix !

love chicken ceaser too

steam chicken and let cool

make salad with cos lettuce red onion cucumber grapes cherry toms slice chicken arrange prettily on plate sprinkle with croutons (garlic and herb) shave over parmesan and
throw on ceaser dressing (delish!!)
