I am a big fan of chickpeas. They are wonderful in hot and cold dishes. My favourite salad at present is chickpeas,grilled red peppers,crumbled fetta,capers,fresh coriander and finely sliced red onion.
Tabbouleh is also great. Bulghur wheat (soaked and prepared according to packet-very easy) with finely diced cucumbers,tomatoes,spring onions and mint.
My top tip is never to buy bottled dressings. They are generally full of weird thickeners.Make up a big jar of your own-approx. 4 parts olive oil to 1 part vinegar or lemon juice,mustard,salt and pepper and crushed garlic. Just shake it before using it. Keep it in a bowl in the fridge as well as the dressing always seems to slide out from under the lid and leave a greasy ring.
Another fabulous one is boiled fresh beetroot (takes about 40 mins. Skin and slice thinly) with crumbled fetta,mint and dressing. Wonderful,but assemble literally seconds before serving as it 'bleeds' and be warned-it will give you pink poo!!!
