How do you make fairy cakes in muffin cases??

Whenever I make these, just using a fairy cake / sponge recipe, they always turn out flat & shrink away from the sides of the muffin case, what am I doing wrong any ideas??

I want to make some for school cake sale tomorrow, last minute as usual

weigh your eggs,

what ever weight you use for butter sugar and flour is the weight you need for eggs.

def use self raising flour

Go on.... explain that to me please....

I dream of lovely looking fairy/cupcakes, but once ds gets his mits on them they look like an accident in a paint factoy.

Made some chocolte buttercream icing last week, made butterfly cakes with some of it, and stuck the rest on the tops of the cakes but it didnt look particulary artistic as used back of teaspoon to apply?

I'm doomed arent I?

Ok, in the end I went for PrettyFeckinVacant's recipe.

I don't think mine look like they are meant to look

I only managed to get 7 out of that mixture but I must be getting better as they haven't turned out flat or shrunk away from the sides but every one looks different, quite patchy coloured on top ................................................................................................ sorry, just had to try one to make sure they are edible! Very very tasty! Now I only have six left. I think I will make some more in the morning & put slightly less in the cake cases so I will probably then get 9 out of the mixture.

I am going to put some butter cream on & then some fantasic fantastic fantastic cake toppers of JB / Captain Jack & I might even add some edible glitter to give them some of the 'John Barrowman sparkle!

I am now seriously thinking these are not suitable for Primary School children & might have to drool over & eat them all myself!

Johnbarrow, good effort.

Hope this is not too late, but I use Nigella's recipe which is pretty bullet proof: here

A cupcake novice like me gets 12 lovely cupcakes out of this. Pipe some buttercream icing and stick a few cadbury easter eggs on top. Goes down a storm.

I use a little diddy spatula that i bought off of a cake making website. Bought sme glitter too. Gonna make some today if i work out how to put pics on my profile i will.

Just thought I'd let you know how my cakes went - like hot cakes!

I put some butter icing over the top of them I then put on the little round rice paper pictures of JB & finished them off with a little bit of glitter, they looked fab.

Instead of making more cakes I made some gingerbread men as I know I can make them & they always sell. As I still had some of the JB cake toppers left, I stuck them onto the gingerbrread men's faces, they looked so funny I couldn't stop chuckling to myself

Every single one of them sold I'm pleased to say, I wish I'd taken a photo of them now.

inspired by this thread I have made Nigella's cupcakes today, minus the vanilla, added lemon zest and they're LOVELY!! so thanks for the thread.

Now I'm off to make some biscuits.. I'm going to be popular at work tomorrow

Yup, I made some too. And I treated myself to a piping bag which has completed my life - they look like proper cupcakes, as opposed to a disaster! (Pic on profile if anyone wants to have a look)

Sorry they didn't turn out too well johnbarrowmanlovesme - I have made two batches tonight and both look lovely. How do you mix? Do you use a hand held mixer and do you mix for at least a couple of mins?

I will put frosting on in the morning, along with a mini egg on each and take into work for an Easter treat

And yes, they sell cake decorations in the form of JB It's just pics of his head on rice paper. Just watching peoples reactions when they saw them yesterday was so funny. Nearly everyone that saw them guessed it was me who made them. One of the mums said she was getting worried about me as making gingerbread men with John Barrowmans face is just weird!

Are you in Britain Falafel? He is touring in October, lots of dates all over the country. If you get the chance, do try & get to see him, he is fandabidozi (sp??) If you haven't all ready , that is.
