How do you make fairy cakes in muffin cases??

Whenever I make these, just using a fairy cake / sponge recipe, they always turn out flat & shrink away from the sides of the muffin case, what am I doing wrong any ideas??

I want to make some for school cake sale tomorrow, last minute as usual

So what's the effect of putting milk in a cake recipe, if the Nigella recipe is Victoria sandwich plus two tbsp milk? Is it to make them softer?

vesela - without the milk the mixture is very stiff and difficult to put into bun cases (as I discovered yesterday, especially if you make chocolate ones)

Like the tip about weighing the eggs though, and using that weight for the other ingredients -works well

Made some on Monday and they were lovely!!

8oz Caster Sugar (used Golden but doesn't matter)
8oz Unsalted Butter
8oz Self-raising flour (sifted)
3 Large Free Range Eggs
a few drops of Vanilla Extract
a dash of milk

This makes 12 BIG Fairy-Cakes in Muffin cases if you fill them two thirds full. Cooked on 180c for about 30 minutes (because there's so much mixture in there - don't want them to be soggy in the middle!).

Used my lovely new Stand-mixer - oh the joy of being able to do nothing and put my feet up the washing up while all my ingredients are being expertly beaten together!!

What mixer do you have? I am thinking of getting one and dont have a great deal to spend so just wondered what yours was and if you would recommend it?
