We're going to have 2 courses of pancakes tonight:

First course: (savoury) will probably involve cherry tomatoes, spinach, basil and possibly creme fraiche, feta cheese or cheddar. Still thinking about it.

For non-dairy: a) onion, tomato and aubergine, slow cooked so the aubergine goes all melty, with a pinch of cumin and coriander, is v yum (and my dcs love it). You could add some lamb mince to that too, I suppose, and make a proper 'meal' of it

Second course: Leftover Ben&Jerry's (dh will have chocolatey stuff, I'm going to be 'good' and have the strawberry cheesecake yoghurt one!) from last summer. And maybe some lemon and sugar ones too. Will make nutella ones for the dcs for breakfast tomorrow with leftover mix as no time before work this morning....[guilty mum emoticon]

How do you make chocolate pancakes? with coca powder or melted chocolate?

My dh is on his way home to make ours (yes, am useless).

We're having savoury ones with a creamy mushroom filling and good old lemon and sugar after that.

For main course I'll either roll some pancakes up round some leftover bolognese sauce, line them up in a dish and and bake in the oven smothered with white sauce and grated cheddar and parmesan cheese. Or will use my leftover roast chicken from sunday and mix in some sauteed peppers and fajita seasoning then roll them up and bake them with cheese like enchiladas. Or possibly mix the chicken with spinach, white sauce, heaps of nutmeg, roll up in the pancakes and bake with grated parmesan on top. Decisions decisions.

Dessert will be pancakes with Fish Food Ben & Jerry's and fresh raspberries.

Can't wait!

Mix together some grated cheese, fried onions and red pepper, and some olives (if you like) with enough basic white sauce to make a spreadable mixture; spread over the pancake and roll it up - yum!

Cherries and ice cream for me (reminders of happy snacking at a Litle Chef on way to holidays as a child) rest of family will want sugar,lemon and syrup. Before I met DH had never heard of syrup on them, I just had sugar and lemon where I came from, or my Mum was poor and didn't let on that other people had syrup too maybe!!!!!!!!!

Leftover Ben&Jerrys is a result of keeping ice cream in the freezer in the garage (not connected to the house) rather than the kitchen, rather than due to great self control on our part....

But it is a bonus when I suddenly realise it is there in time for pancake night

i said in an early post ,i hate them but made dh some for tea and had a nibble mmm so we had 2 each whith choc spread and strawberrys yum but not had them for years tho !!

Main course - tortillas with spicy tomato, red pepper and chorizo with lettuce fresh toms and sour cream

Pud, thin pancakes with a selection of fillings including sugar and elemon, golden syrup, raspberry jam.

BALLOONSLAYER Look Here....

Vegan (egg & dairy free) pancakes

150g plain flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon (optional)
2 tbsp mild tasting oil
5 tbsp water
300ml soya or rice milk
1 tsp vanilla extract
2 tbsp maple syrup

mix the wet stuff, then add to the dry stuff - dont overmix.

Heat a tiny bit of oil in a pan
add a thin layer of batter and turn when bubbles cover surface.

Now, dont expect these to be as good as normal ones but my DD (allergic to dairy & egg) doesn't know any difference and so loves them

As for the filling - just slowly heat a punnet of blueberries in a small pan with a couple of tablespoons of maple syrup. Wait for the berries to start bursting and then take off the heat. Pour over the pancakes and enjoy (a dollop of ice cream on top wouldn't hurt).
