Toastie fillings - what's your favourite?

DS loves toasted sandwiches but I am fed up of cheese. And cheese and pickle. And cheese and chutney.

So what else can I put in a toastie? Must be vegetarian. When I asked my sister, she suggested Roses chocolates . I was hoping for something slightly more nutritious! Any suggestions?

Finely chopped apple with raisins and desicated coconut and a but of strawberry sauce, mixed in a bowl and spooned onto bread.

Eggy bread with banana in the middle.

What about boiling potatoes,mash it and spice it up with salt, pepper(chilli powder/curry powder according to your taste),chopped coriander and spread some butter on the inside of the bread and fill it
inside.If he likes it add other small diced and boiled vegetables as well.You can freeze portions of this and may be try adding different vegetables as you go along.

Can I just add quickly that re-fried beans make a great toastie filling, especially if you add some cheese and/or avocado.

tomato, basil and black olive is nice.

I also do a mushroom and sweetcorn one(add the veg. to a thick white sauce as if making a vol au vent filling.)

roasted vegetables.(peppers, courgette, onions garlic, tomato etc.)

i have bought creamed corn in the UK in the past at it was not a shop in covent garden selling kangaroos. i wonder were it was........

I've seen creamed corn in Asda.

Would a cracked egg into a proper toastie maker work do you think? I may just have to test that one out tomorrow too along with chocolates

re egg - I whisk it up with a tiny bit of milk. press the bread down to make a hollow and pour it in.

then eat it dipped in ketchup om nom nom
