my bil once grated it and put it a chicken curry he was making. he wanted the curry to be green. and lo and benold, it was!
grate it, mix with plain youghurt. dash of salt, cumin and garlic, if you like garlic. yummy with rice or pitta

I will resist the lewdness of the thread (tho it is very tempting) and post a serious answer.

Slice as thinly as possible, do the same with an onion. Soak both in vinegar and loads of ground pepper, leave for a while before using. Delicious in sandwiches.
