I am cold and I have been ill and off my food. I now feel like eating.

What would be lovely and comforting and veggie?

Things I have thought of already:

soup
jacket potatoes
cauliflower cheese

mashed potato with melted cheese , just finished some left over from last night
veg sausage sandwich , with lots of brown sauce
cheese on toast

lovely stew:

onion, carrot, potato, parsnip, swede - cubed - the same quantity of each. Tin of tomatoes, some veggie stock, a spoon of marmite, a bay leaf and some green lentils

bring to boil then simmer til veggies are just right. Lovely with dumplings

Thanks Tommy - stew sounds good but I am trying to avoid the overuse of tinned tomatoes, as I'm not very fond of them. LOVE swede though.

That pasta thing sounds great MotherFlippin - do you just fry the leeks until browned?

I made stew and dumplings on sunday night on the recommendation of a friend and it was lovely. It was so easy to do too.

You could leave out the tinned toms. I added kidney beans to mine too.

Angelsey eggs.
Nest of mashed potato and leeks - fill with hardboiled eggs - top with cheese sauce and grated cheese. Herbs are nice in it too - especially rosemary.

I have been sick and when I am poorly but just getting my apetite back I eat mash potato with cheese.

Yesterday, after starting to recover from my bug, DH bought me butternut squash risotto and cheesey mash from sainsbury's. YUM

Ultimate comfort - blue cheese risotto. Mmmmmm. It does need a salad like rocket though, or it's just too much.

My favourite is roasted butternut squash. But I also love Nigella's lemon risotto. And I have recently done courgette and spinach a few times and found them excellent.

I think Mushroom risotto is over-rated.

Another veggie comfort food for me is pasta with pesto and roasted tomatoes. I add avo and goats cheese if I have it.
