Do you give your kids puddings? I do, most days but am running out of ideas...yummy, easy ones please!

I like to give them a pudding, they are like rakes and if they are homemade puds I don't feel bad about it.

I do:
apple sponge
apple crumble
fruit salad
honey yogurt
ice cream (once every couple of weeks)

but have run out of ideas.

Just bananas and custard is one we have here as it is so simple. Also banana cake with custard. Annabel Karmel's country apple cake is quite good with custard. Otherwise it is treacle sponge cooked in the microwave or crumbles. Occasionally do cherry tart but that is to go with cream/ice-cream. Rice pudding and semolina.

Most of my pudding making is in response to a glut of milk. And I only get a pint a day so actually it is a good way of getting milk into them.

my treacle sponge is pretty much like ivykaty's. And obviously could translate to jam sponge, apple, sponge, spotted dick etc.

To stodge up yoghurt I add muesli as well as fruit and honey.
Staffordshire oatcakes can be eaten like a savoury tortilla, but we have them as ready made panckes with compote and so on - my Tescos and asda sell them.
I was stewing blackberries with sugar to make compote type thing and they'd just turned into juice so I added porridge oats to thicken and it was lovely fruit porridge- the kids just thought it was fruit.

Banana squadge: mash several bananas, put in a pie dish, whip cream, spread over top, sprinkle a couple of crumbled Flakes on top.

Toffee sauce: melt demerara sugar and butter in a saucepan, bring to boil and add a little cream. Pour over vanilla ice cream - add walnuts if you like.

Try frozen cakes/pâtisserie from Waitrose, especially the ones made in France - Tarte Tatin etc.

ruddynorah · 02/10/2008 19:23

no need for waitrose, lidl and aldi do very nice 'foreign' cakes etc

Great ideas here , usually just fresh fruit but also been doing an easy version of eton mess lately - mashed up shop bought made meringue, a few strawberries mashed up and the rest sliced and mixed in with cream or creme fraiche.

Ambrosia do their rice pudding in yoghurt pot-type cartons - especially good for out and about and don't need to be kept cool. They also do some really nice custard and peach stuff in similar form

Just wanted to add Nigel Slater's 'Delightful Trifle' from his Kitchen Diaries book.
Basically you layer sponge cake 350g (bought fine),
blackcurrants475g (he uses fresh that he simmers for 10 mins with caster sugar, but I have used tins and defrosted fruits of the forest packs)
Then mix 1 large egg yolk with 2tbsps of caster sugar, then stir in 250g mascarpone cheese and drop vanilla extract. Fold in250ml of softly whipped double cream and a whipped egg white( I have left that out before now)
Leave in fridge for at least an hour.
We start off with bowls and end up with our spoons in the dish!

Really good pud recipe books include Nigel Slater, Real Fast Puddings, and Chez Panisse Desserts. Fruit sorbet is easy and healthy. One-crust galette is also good (see Chez Panisse).

IvyKaty

I made your microwave sponge (syrup) it was amazingly light and delish according to the family (they all had seconds )but the syrup was quite gluey and in a lump at the bottom, I had expected it to be gooey and have melted everywhere. Did I do something wrong?
