Chop and fry onion
Add can of cocnut milk, butternut squash cubed and a red chilli.
Cook until squash soft.
Puree.

Leek and Potato or lentil. Have found that the simpler the soups the nicer they taste.

Beetroot and dill with creme fraiche.

Roast pumpkin with cheddar cheese.

Slice one large pumpkin season and a little oil and roast at gas 6 for 45mins to 1hour.

1 chopped onion
1 litre homemade chicken/veg stock
a little milk.

Fry chopped onion in a little oil for 15mins
add peeled/chopped roasted pumpkin stir together for a few mins. Add stock and cook for 30mins.

Blend until smooth add a little more stock or milk to thin.

Serve with a handfull of cheddar cheese stired in and crusty bread.

You can add a little garlic, but i find it over powers the pumpkin.

I make a really nice wintery root veg one with parsnip, carrot, sweet potato, potato, chicken stock and lots of fresh herbs. Yummy.

Cauliflower soup is divine.

I also do leek and potato.

French onion.

Vegetable, when got random bits of veg in the fridge, but it always must include potato and not have tomatoes in it.

Watercress very nice in the summer.

I don't do sweet potato, carrot, parsnip or pumpkin but that's just because I don't have a sweet tooth.
