low cholesterol meals to feed 10 people ( budget)

nothing too fancy but all recipes welcome.

i know the basics - more wholewheat and oily fish, less animal fats , more exersise.

problem is if it were just for me - no problem - i can eat wholegrain anything til the cows come home, but dh and bil are not bit pasta fans. - so lateral thinking required - i dont mind cooking a seperate bit of pasta for me whilst they have chips or something - but need recipe ideas.

i have some frozen chicken breasts and would love a curry idea. i am not a fan of creamy curries anyway

so any ANY ideas welcome. I hate cooking with a passion - i can't tell you.

i am cooking for 10 people and the occasional school friend/gf/bf and my purse has limits as we are moving house soon.

what about huge bowl of salad with tikka marinated grilled chicken breasts and oven baked jacket pots and a bit of crusty bread for those who want more carbs

Relatively low fat. Wrapping chicken breast in parma ham and grilling on a griddle or GerogeForman or hte like, Cut in half Serve on toasted ciabbata with some grilled/roasted vegetables e.g. courgettes, tomatoes, mushrooms. Quite healthy and easy to prepare for a large number of people. Can serve chips of the side for those who want.

forget grilled chicken make it oven roasted chicken then you don't need to have the oven and the grill on

If you flatten chicken breasts out with rolling pin they cook quicker and don't dry out so much.

roasted vegetables - is it as simple as sticking it in a tray andcovering with olive oil?

for roasted veg, cut all the veg up, put in a big bowl and toss with olive oil and garlic and herbs if you life, then spread on baking trays and roast. You don't want them sitting in oil, just lightly coated.

Chicken "nicoise"

Cut chicken in strips ( say 4lbs) and stir fry in a little olive oil with 10 chopped garlic cloves and 4 quartered onions and 2 yellow peppers cut in strips.

Add 2 tins whole peeled tomatoes, 1 tin pitted black olives, rosemary, a tbsp sugar, 1/2 tsp salt and pepper.

Simmer until sauce reduced. Adjust seasoning at last minute so as not to overdo it.

Serve with
-huge salad of any greens topped with fresh toms. crumbled sardines and chopped onion in lemon juice dressing
-Mountain of mash
-mountain steamed broccoli with olive oil/lemon juice/crusehd garlic vinaigrette

Ditch the mash..too much butter
Roast mix roo veg sounds good.
peel/cut/toss in oven tray with olive oil/rosemary/salt pepper and roast 45 mn, turning occasionally

medium low heat, about 30mn
If sauce runs thin/dry add a little water.
If sauce too watery, cook another 5 mn with lid off.

You can do the same with fish.

Just cook everything the same way without chicken then put pieces of fish in oven proof dish. Spread sauce on top and bake 30 mn. Cover in foil so as to keep it moist.

The beauty is all this can be made in advance and just reheated.

Do you like fish?

Grilled salmon with mash/broccoli/green beans or the like . Serve with a light soy sauce/ oil dressing dribbled over the fish and vegetables. V. tasty.

Have you got a steamer? V. easy and healthy way of cooking. If have one with 3 tiers. Wack it on steam fish/chicken at same time as vegetables 10-15 mintues later all is cooked and vitamins and minerals still inteh food. tastes fresh and keeps hot while you serve up.

More for the autumn/winter but do your family like hearty soups?. cos they are great one-pot-wonders and you can feed lots in one go.
Can serve up with crusty bread and cheese for those not concerned about the fat content. Really simple leek and potato/ curried pumpkin ( sounds gross but really tasty) / onion soups. Don't need to worry to much about timing. Can make in advance and heat up or even freeze and defrost. Can use up vegetables that you might otherwise not have a use for.

Not really for summer though.

Overmydeadbody's chili con carne sounds good.

fry 2 onions, 6 cloves garlic, 3lbs mince.
Add 1tbsp cumin powder, 1tsp paprika, 1/2 tsp chili powder salt and pepper, 3 tins tomatoes and simmer 20mn.

Add 3 tins red beans and heat thouroughly.

Adjust seasoning. This has got to be quite pungent o go on and add spices if necessary.

Serve with rice or corn tortillas

Make fresh salad of finely chopped celery/sweetcorn/toms/grated carrots/grated cabbage with lemon juice vinaigrette and chopped coriander and dash cumin powder

What kind of soups sound good to you?

Basic principle is lightly fry onions with or without garlic/ celery as you chose. When soft and in whatever vegetables you fancy s add stock ( hot water and stock cube and powder ) Cook over medium heat till soft and edible. Blitz in a food processor if you want it smooth. Serve or chill and heatup later or freeze.

Serve with grated cheese if you want and/or crusty bread or croutons ( chooped up bread grilled - not fried as v. fatty)

Buy a jar of ready made paste and follow instruction.

VERY time consuming to ground and mix spices to make proper paste.
