low cholesterol meals to feed 10 people ( budget)

nothing too fancy but all recipes welcome.

i know the basics - more wholewheat and oily fish, less animal fats , more exersise.

problem is if it were just for me - no problem - i can eat wholegrain anything til the cows come home, but dh and bil are not bit pasta fans. - so lateral thinking required - i dont mind cooking a seperate bit of pasta for me whilst they have chips or something - but need recipe ideas.

i have some frozen chicken breasts and would love a curry idea. i am not a fan of creamy curries anyway

so any ANY ideas welcome. I hate cooking with a passion - i can't tell you.

i am cooking for 10 people and the occasional school friend/gf/bf and my purse has limits as we are moving house soon.

the quicker
the simpler
the cheaper
the better

Probably bored of me by now but tinned tuna - mix with mash and sweetcorn and dash of tomato ketchup. Mould into fishcakes dip in beaten egg and then breadcrumbs homemade or shop-bought- bake/ grill or fry. Can make day in advance.

Sounds like a faff but making breadcrumbs is a good way of using up staleish bread you don't want to throw away. You can bung in it a food processor ; blitz then freeze and use whenever you need then only need a half hour to deforst. Serve fishcakes with frozen peas - very cheap recipe.

What's this for thought custy? Just to loose weight or have a healthier diet?

Because any wholgrain bread is good, but the occasional white bread is fine too. Pitta bread also fine, as are wraps.

Curry:

Fry an onion until transparant, add crushed garlic, spices of your choice including cumin, paprika, garam masala, cardamom and coriander and mustard seeds. Add chicken peices and chopped veg of your choice (I so potaot, carrots, broccoli, french beans, peppers), add chilli if you want it hot.

Then if you want it tomato based add some tomato puree and chopped tomatoes or tinned tomatoes, or if you want it creamy add coconut milk, then right before serving when all cooked add half a pot of naturral yoghurt, on low heat, and heat through. Don't let it boil or it will split.

As an alternative substitute the chicken with beef or lamb peices or prawns.

for thai style, instead of spices add garlic, ginger, lemon grass and lots of fresh coriander and coconut milk. LEave out tomato obviously. Add lemon juice if you want some tang.

am i mistaken in thinking that potatoes white rice and white bread are bad for you - or is it just thatis ok in moderation?

they are nutritionally less interesting than wholegrains due to refining process.
And also i think roughage in wholegrains is better at "cleaing up" the digestive tract in a purely mechanic action

Wholemeal pasta salad with (tinned) salmon and lemon pepper dressing

Cook wholemeal pasta (enough for 10)and drain, run under cold tap to cool. Empty 3 400g tins of pink salmon into a large bowl and sift through it, picking out the skin and bones.

Grind or crush 6 tea spoons of black peppercorns, mix into 1 cup of virgin olive oil and 1/2 a cup of fresh squeezed lemon juice. Shake vigorously.Finely chop 2 cucumbers and mix all the ingredients together in a huge bowl.

Serve with wholemeal baguette slices spread with garlic infused olive oil and toasted under the grill.

Cous cous. Pour cous cous into bowl, just covering with boiling water and leave for 15 minutes - break up with fork

For cold salady kind of thing mix in chooped tomato, cucumber, raw mushrooms and a few pine nuts add a salad dressing - I like balsamic vinegar with olvie oil and mix through (not too much dressin or it will go clumpy and sticky). Serve with chicken or fish

For hot dish mix cooked chopped onions, some raisins or dried apricts chopped, a few raw chopped tomatoes and stick in microwave to warm through again before you serve it. Serve with a stew - perhaps lightly curreid minced lamb with sweet potato (add sweet potato to cut down on volume of lmab so reduce cholesterol) or chicken in tomato sauce.

stew can - agree with you about sausage caserole.

Chicken stew easily low cholestrol - just don;t add much fat when frying onions and put it in a tomato based sauce.

My standard recipe for every thing:

fry meat and onions in a little oil then add garlic, add bottle of passata and some stock (change balance of passata/stock dependiong on how tomatoey you like it)
add vegetables cut fairly large
Cook shit out it until veggies are cooked

For curry add curry powder at stage one...
For Chili add chili powder at stage one and kidney beans at end
For Bolognese add muwshrooms and grated carrot and skip other veggies.

can add flavour to stews by giving them a light spray of oil and tossing them in a watered down sweet chili sauce then rasoting then before adding to stew. Chili sauce caramelises but be careful not to burn.

Custy, you need to focus on a healthy balanced diet with lots of variety, but you don't beed to cut out high cholesterol foods, as there is no link between cholesteroll intake and cholesterol levels.

agree with OMDB - low cholesterol = low saturated fat. Keep cheese, butter and red meat to a reasonable level.

due to speed reading i think i have got a little mixed up

just read something that says

i thought i read that starch is bad

i realise i can change brown pasta rice etc. but are potatoes ok then?

Potatoes are ok, carbs provide the energy we need. It's what we put on the potatoes and how we cook them that could be labelled 'bad'. A baked potato smothered and drowning in butter and cheese isn't exactly going to be good, but the same thing with some tuna and salad would be good.

Unless of course you are on an Atkins stylee diet and want to loose weight, in which case cutting back on carbs and eating more rptein would be an idea.
