What is your favourite summer lunch?

I have a couple of things coming up where I'll be making lunch for friends and family.

Medium effort - I have a 2-year-old and a baby at home with me so nothing too onerous, but I want to do something nice.

Vegetarian ideas preferred.

What about pud?

Quiche, salads, very fresh crunchy bread and nice cheeses - yummy!

Or home-made soup and fresh bread

Mine is bootiful fat ripe tomato and mozzarella with bread and olive oil.

Perhaps an avocado if I am feeling adventurous.

Doesn't get much easier really.

unusual salads,my favourite is
feta chunks,grapes halved,artichoke (from a jar) and sliced,bacon bits,cherry toms halved,new pots halved basil

great cheese

crisp white wine mmmmmmmmm

Roasted veg salad with balsamic dressing and parmesan shavings is dead easy, serve with crusty bread.

Jacket potatos - lots of small ones so just bung in the oven and a few different fillings,

celery mayo and apple,

cabbage shredded with grated carrot and onion with salad dressing or mayo

grated cheese

beetroot and cream cheese and tomatos chopped in

Make the fillings up the night before and put in the fridge

Melon chunks and strawberrys for pudding with oj poured over - serve with ice cream if you want.

2 is a doddle

it is as they get older they come up with stuff to spite you

dd1 this week "I hate cherry tomatoes" when fridge full of them cos she ate them last week
