What is your favourite summer lunch?

I have a couple of things coming up where I'll be making lunch for friends and family.

Medium effort - I have a 2-year-old and a baby at home with me so nothing too onerous, but I want to do something nice.

Vegetarian ideas preferred.

What about pud?

Salade nicoise

I'd second tabouleh (sp?), roasted veg salad with couscous.

I do a mean warm egg and bacon salad - romaine lettuce, bacon chopped up, boiled egg chopped up (better if the yolk is still slightly runny), croutons.

Y'see, I love all these poncy salads.
Was thinking about maybe doing a 2 bean, feta and strawberry salad, or an avocado, mango and beansprout with lime dressing... but I struggle to put something with them to make it seem like a filling meal. I'm BFing at the mo and bloody ravenous all the time. If I have a poncy, fruity, rahrah salad I'll need a bloody great cheese sandwich before the guests arrive and a bowl of cereal as soon as they leave.

I made some friends a home-made cheese, onion and tomatoe quiche, with a salad recently. Went down really well.

To make the salads more filling just griddle/dry fry some halloumi - it is gorgeous with roast veg and couscous, and add a squeeze of lime juice!

roast chicken

left to cool and then torn up with lots of salad leaves, avocado, cooked and cooled green beans and then drizzled with that balsamic glaze that they have in the supermarkets

leave a bit plain for the kids

sorry not veggie but my fave summer lunch standby

you could always do the veggies a baked potato and beans
