I don't suppose you have a chicken burger recipe please? Or is it a fillet in a bun?

RemusLupinsBiggestGroupie · 30/08/2026 12:14

Ratatouille and jacket potatoes today and I’m also making a big pan of lentil bolognaise for the freezer.

Then I’m on my own for most of the week so it will be mostly Greek salad and omelettes. I’ll also probably have a stir fry with gyoza or make some channa chaat.

BiddyPopthe2nd · 30/08/2026 14:13

Unfortunately the pate had not survived the trip but I mostly stuck to my plans - I used my tub of cacci e pepi sauce with fresh pasta instead of pate on Wednesday and the other half for a fast dinner on Friday (I’ll use the burger another time).
And the beef short ribs were well worth the effort last night (I have 1 more portion frozen).

Tonight I’ll have lamb chop, roasted yellow courgette and roast potatoes
Tomorrow buffalo chicken wings
Tuesday salmon and wilted spinach
Wednesday I have a work event so may not need more than cheese on toast
Thursday is a curry
Friday possibly chicken Kiev
Saturday I am thinking lamb and feta burger with salad
Sunday lamb koftas (and either Sat or Sun I will also make a shepherds pie with the rest of the lamb mince, as there’s a lot!)

Citygirlrurallife · 01/09/2026 11:20

Tonight is a bashed and fried courgette recipe from Substack with butter beans and tomato confit

ordering in sushi tomorrow

i want to do miso sweet potatoes on Thursday but not sure what with at the moment, probably mirin and soy spring greens just because I have them in. Need to think up a protein

Bookclub on Friday so all the nibbles

risotto Saturday

might do a proper roast on Sunday

murasaki · 01/09/2026 12:32

Tuna steak could work.

HalloumiFries · 01/09/2026 13:41

@Citygirlrurallife that courgette recipe sounds great - would you mind sharing?

SpaceOP · 01/09/2026 13:51

Someone on this thread was struggling with wider rice noodle availability (was it @RemusLupinsBiggestGroupie ) . I was in my local waitrose the other day and saw that they're now selling the waitrose ones in a medium width as well as the super thin ones they've always done. I'm pretty sure I'd not seen them before (although possibly was just blind). If that's helpful.

We're winging it a bit with a few moving parts ahead of school return probably somethign like,

Chicken burrito bowls
Pizza after a long day out
Spag bol in slow cooker

I do have some leftover lamb in the freezer so might do a lamb and aubergine curry as well. Not sure.

murasaki · 01/09/2026 14:34

Leftover lamb amd aubergine screams moussaka to me! But then I always make mine with leftover lamb rather than mince.

Ooh, I could see that as a win. Much as I love greek food, I've always found Moussaka a bit bland but thinking aout it with leftover lamb... maybe!

RemusLupinsBiggestGroupie · 01/09/2026 16:27

That’s useful to know, thanks @SpaceOP

I seem to have come down with a nasty lurgy so I made a vegetable and lentil soup yesterday to try to burn some of the germs away.

Haven't posted in a few months but need to get back to it. Just done our plan and ordered shopping.

Friday - Creamy lemon chicken orzo
Saturday - Pad Kra Pao
Sunday- Cottage pie
Monday -Fasolada (Greek bean soup)
with cheesey garlic bread.
Tuesday - Not home until late so jacket potatos with tuna mayo and salad.
Wednesday - Chicken Laksa
Thursday - Slow cooker gammon with cabbage, peas, champ and parsley sauce. (Mainly doing this so I can use the leftovers for soup!)

SpiceGhoul · 03/09/2026 20:20

@Lastqueenofscotland2 could you please share your lentil sloppy joes recipe? I'm trying to eat more pulses and those sound delicious 🙂

I’ll offend someone that’s big into their American food here…
but boil some red lentils until they are nearly cooked. Set aside

Fry off very finely diced onion, garlic, red pepper, chilli. Add lots of cumin and paprika, touch of nutmeg, then tomato puree, add in the lentils and a splash of stock so they finish cooking, add soy sauce (for salt, but with a bit of savoury). That’s it! I serve them in buns with bbq sauce.

I think you’re meant to add brown sugar but I find that makes them too sweet

HalloumiFries · 04/09/2026 15:10

Thank you @Citygirlrurallife for the courgette recipe. It looks great - will try to build it into the next few weeks.

We had a nasty bug sweeping through the house last week, so this week's plan contains a few things I didn't end up cooking then.

Tomorrow: Chicken thighs with creamy mushroom orzo
Sunday: Peinirli with salad
Monday: Baked cod with tapenade, pine-nuts and tomatoes (from roasting tin book)
Tuesday: Cheese and onion quiche and salad
Wednesday: Pasta with tomato and roast peppers.
Thursday: Breaded cod, wedges, broccoli and peas
Friday: Chicken fajitas.

BiddyPopthe2nd · 05/09/2026 12:20

I decided there is not enough freezer space yet to defrost and cook my lamb mince - as it would need a couple of shepherds pies to be frozen after due to the double size bag of mince. So I’ll do that in 3 weeks time (I think I will be too busy next weekend and I am away the following weekend).

so today will be a steak with mushrooms and bearnaise sauce.
Tomorrow chicken chasseur
Monday fennel sausage pasta
Tuesday chicken and mushroom vol au vents
Wednesday Welsh rarebit with fresh crusty bread
Thursday work event
Friday salmon and spinach

murasaki · 05/09/2026 16:42

Last week went somewhat awry, due to both my mum and DP needing to go to hospital, so some stuff has carried over.

Tonight: beef casserole with dumplings
S: Chicken thighs, roasties, asparagus, gravy
M: Moussaka and salad
T: not sure....
W: Spag bol
T: Salmon for me, spam and eggs for him, chips, salad for me beans for him

yamsam · 05/09/2026 20:43

This coming week

Sun: Steak, stuffed mushrooms and chips
Mon: homemade chicken and veg soup
Tues: pork chops, rice and green beans
Weds: spagetti Bolognese
Thurs: honey, soy and garlic chicken with rice, radish and cucumber

Saturday: usually homemade pizza night

Makelikeatreeandleaf · 06/09/2026 05:56

Tofu Buddha bowl
Pasta with caramelised onions and spinach (picked up a new recipe card in Waitrose last week)
Jacket potato and salad
Tofu chow mein

DilkushaKitchen · 06/09/2026 13:12

I've not been on for a while, disrupted weeks, but have done a proper plan this week and did the shop yesterday

Yesterday - pushed the boat out a bit, we had rigatoni with cavolo nero and olive oil, then pan fried sea bass/halloumi with crunchy kohlrabi, carrot and radish salad and blistered padron peppers with (shop bought) Sicilian lemon ice cream and basil sugar for pudding

Today - Sticky chicken and plum traybake, roast potatoes, salad

Monday - Padron pepper & smoky BBQ corn fajitas, shop bought ribs, salad

Tuesday - Beetroot and sweet potato gratin, salmon, salad, potato salad for those who won't like the gratin

Wednesday - Masala roast carrots with coconut red lentils

Thursday - Spinach and ricotta penne

Friday - Cod traybake with green beans & crispy capers
