Looking forward to seeing some old and new planners.
After two beens of cheese and cake I’m looking forward to some normal food!

Friday: lemon asparagus risotto
Saturday: mushroom & goat cheese tart
Sunday: Tofu Rogan Josh
Monday: Pesto beans on sourdough
Tuesday: peanut noodles
Wednesday: harissa tofu
Thursday: pasta e fagioli

I ended up having country sausage meatballs and Mediterranean veggies in tomato sauce with pasta, salmon and french beans, chicken and mushrooms with rice, and pasta bake this week. And a Big Mac meal when I was delayed travelling back from Netherlands on Thursday (so pasta bake was postponed to last night). I also used a load of veg and some bacon in a big Spanish omelette for a proper breakfast Wednesday and lunch the next day.

I have nice buns from that trip so defrosting a couple of burgers for tonight.
Mushroom risotto with frozen chicken stock tomorrow.
For Mon, Tuesday and Wednesday, I have a couple of freezer meals (spag Bol, butter chicken, a chicken Kiev, fish pie), one portion of chicken thighs and a couple of pieces of salmon, 1 yellow courgette, half tub of cherry tomatoes and half a bag of spinach, 4 eggs, a half block of good cheddar, 3 packs lardons and a bag of fresh pasta that I should use (but I could bring the pasta/tomatoes with me and the lardons can last til I get back). Wednesday needs to be very easy as I have to start driving at 10pm and I need to leave everything cleared away, bins emptied for a 2.5 week absence. I may grate the cheddar to freeze.

I’m doing a veggie lasagne tonight

Tomorrow is Beyond Meat burgers with corn on the cob and sweet potato fries

Then it’s just me for two days:
pitta, tzatziki and spicy feta dip
sweetcorn fritters with smashed radish salad

Then courgette pasta

Then away for a few days

This week finds me full of cold, so I'm tired, snotty and fed up. Great start 😅 I also have a week off work so a little more time to cook in the afternoons, but we'll see how that fares with the general unwellness. Also got family staying at the end of the week so need to conserve my energy!

S: Quorn escalope for husband, veggie and cheese stars for kids, with mixed veg and herby smoked paprika sweet potato cubes. Leftover takeaway pizza for me as my appetite is a bit whacked.
M: pasta with veggie meatballs and tomato and basil sauce
T: veggie chicken tarragon and rice
W: tofish pie
T: pesto pasta with Quorn pieces and tomatoes
F: chickpea, potato and spinach curry with rice, naan, samosas and veggie pakora
S: Greek night - a huge feta and spinach pastry whirl from Lidl, Cretan flatbread (also Lidl), roasted veg and tzatziki followed by baklava (you guessed it, Lidl again) and ice cream if anyone still has room!

@RemusLupinsBiggestGroupie i LOVE corn fritters. I've tried to make them a few times eith mixed success. Corn or butternut (pumpkin) fritters are common in South Africa but my mum didnt make them - i got them at friends' houses. Also loved courgette fritters in Greece!

I dont think any of the gannets in this family would consider them an adequate dinner, but perhaps i will make some as a summer lunch one day.

We.havent had the curry so thats still on cards and we will probably make.do with leftovers from a bbq yesterday for to night. So meal planning to commence for Wednesday.

I’ve decided that tonight is a half a duck breast, 3 potato croquettes and some french beans (possibly roasted with garlic). And I’m throwing all my leftover cherry tomatoes into the oven to roast with some diced onion and garlic and balsamic vinegar, to then blitz and freeze as tomato sauce for pasta when I get back.

I think tomorrow will be roasted chicken thigh with roasted chunks of potatoes and a Lemon/courgette bake.

DP says they’re not a proper meal, hence my planning them when he’s not in!

Yes to courgette and feta fritters - might have to plan those for next week. The African ones sound great too - love a fritter!

I have some butternut so going to try the fritters today/tomorrow.

Food for next few days:

Steak - probably a posh sandwich style or possibly tacos.
Chicken burrito bowls.
Leek and feta greek filo pie
Aubergine stuffed with miso flavoured pork mince
Fish with new potoates and veg

Wednesday I ended up doing mushroom ravioli with a mushroom and cream cheese type sauce to finish things off.
Thursday I was on the ferry so chicken thigh (single!) and plain rice.
Friday, DD had bought a “BBQ in a box” meal for DH birthday, which was yum - 4 kinds of smoked and pulled meats that just needed reheating in oven.
last night was the rack of ribs done on the BBQ that DH had bought for Friday, that I did diced potatoes and chipotle sweetcorn with…DD’s version was better!

Tonight, DH has requested feta chicken…I have Mediterranean veggies to go with it but need to get some potatoes.

We are here for Mon-Thurs evenings, and he has asked for “normal” dinners (I think he means real food but not too much fuss). Thursday I have a dentist appointment at 4 to rebuild a tooth so that’s a soft night. Possibly things like chicken fajitas, a curry, spag Bol…the other days.

M: homemade moussaka from the freezer, baby spinach salad
T: out
W: DP bought some cheesy spam fritters, he's on his own there! i will have a salmon fillet in a foil parcel with lemon, black pepper and garlic, both will have chips and mushy peas
T: it's supposed to be 36 degrees, so cold roast chicken thighs, potato salad with an olive oil and mustard dressing, green salad of some sort.

Tomorrow: Going to fry some halloumi with sweet chili sauce + just have it with some focaccia and salad stuff

Wednesday: Beyond burgers, chips + salad
Thursday: I’ve got a work lunch in London and it’s going to be disgustingly hot so probably nothing for dinner
Friday: Gochujang prawn stir fry + spring rolls
Saturday: Pizza 🍕

I haven't joined in for a while, though I am still planning!

This week is/was

Saturday - shop bought pizzas

Sunday - was going to do a beetroot and sweet potato gratin with sausages, but didn't get back in time before going out again, so roasted the veg for today's lunch with some chickpeas and had posh jar of pasta sauce with bucatini instead

Tonight - Cheesy chipotle corn baked rice

Tuesday - Baked cod with a chorizo crumb & lemon aiioli, new potatoes, green beans, summer greens

Wednesday - Cabbage cacio e pepe (first time make before the eclipse)

Thursday - Masala roast carrots with coconut red lentils

Friday - eating out at Stage in Exeter, as a belated graduation meal for my daughter.

Yesterday was omelette and salad

Today is Greek salad with lemon baked new potatoes

Tomorrow is pizzas with bought bases and chosen toppings plus rocket and Parmesan salad

Weds is flat breads, hot honey haloumi, salad and the rest of the new potatoes

Thursday - I’ve ordered something but have forgotten what it is

Friday - vegan Thai night for six: I’m going to try making vegan sweetcorn fritters / tofu and vege green curry / cucumber, red onion and peanut salad / rice. DC are bringing a noodle dish and dessert.

Summer has thrown all meal planning out of the window, plus working a lot away from home so DH basically in charge.

pretty much making salads every day from whatever I can scavenge out of the fridge….i did air fry cod for the first time yesterday though, covered it in furikake seasoning and cooked rice with dashi and sprinkled veg with match salt for a bastardised Japanese style meal

Im the same as citygirl, not keen on cooking int he heat and meal planning not happening in the usual way, lots of DIY salad nights!
This week we’ve done slightly better.
Sunday Immunity Stew from the freezer
Monday sardine and lemon pasta
Tuesday salad Nicoise
Wednesday chilli
Thursday mackerel pasta
Friday Balinese chicken curry
saturday cod and chorizo roasties

The fritters came out okay. But the flavour was a bit bland - I think more a feature of bland butternut than anything else. And I microwaved it to cook it first which I always thinks makes butternut a bit bland. Next time I'm roasting somethign I'll have to do a jame oliver and throw a couple of butternut in as well to roast alongside and then use that later!

Today is last day of current meal plan. My irritation that I have to do more meal planning is quite epic.

I haven't updated here for a long time for various reasons, but have just sorted out a plan to take us up to next weekend.

Today: Baked potatoes with tuna mayo and cheese, plus salad.
Tomorrow: Minestrone with bread
Friday: Black bean chicken and broccoli with rice
Saturday: Spaghetti carbonara
Sunday: Chicken kebabs in pitta, Greek salad and tzatziki.
Monday: Chicken escalopes with new potatoes, broccoli and carrots
Tuesday: Fasolakia
Wednesday: Greek salad pasta
Thursday: Possibly out
Friday: Halloumi and lentil stew
Saturday: Spaghetti cologne
Sunday: Roast chicken

@SpaceOP Thank you for thinking of me - still have the axe swinging, the next part of the process has been delayed, which at least has gotten me to my 19 year anniversary so a little bit more payout if/when the inevitable happens. Still a horrible feeling though. Missed out on a job recently which seemed perfect, and that hit me harder than I would have expected.

Hope things pick up for you.
