I tried to load this before so sorry if it appears twice.
I am a sandwich lover and go through phases of loving a particuar one.
At the moment my fave is bbq chicken ( from the supermarket) chopped , sultanas, s and p, with celery, red onions and walnuts ( all diced tiny) , smothered in good egg mayo. On buttered fresh white bread.
I'm getting tired of it after a month so am after new ideas please.
I have heaps more but I've done them for a month each too.

You can't beat good quality ham with Dijon mustard, salty butter and a crusty white roll IMO

3rd suggestion..
Fishfinger sandwich. With spinach leaves and dill mustard, it's so delicious.
Or literally just old school with ketchup.

We are a nut free house so I use tahini alot. One of my favourites is a wrap with tahini, sliced dates and a drizzle of honey.

I also love a proper Australian style salad sandwich with white bread, finely sliced iceberg, mayo, eggs, grated carrot, sliced tomato, pineapple rings and cheddar cheese.

Best salad sanga ever!!!

Thanks everyone so much for all the great answers!
I have heaps of ideas and hope everyone else does.
As we are including toasted I have to add our at least monthly Sunday night dinner .
Thick white bread , toasted on one side, topped on the untoasted side with crispy fried bacon, tinned pineapple ( sliced thinly horizontally) heaps of slices of cheddar/colby cheese, sprinkled with paprika and s and p. Grill/airfry until bubbly. Deeeeelicious.

OH, and I clicked on the link from a pp but couldn't see a coronation chicken recipe. Every one I google is different, so if someone could post a really good version that would be fab.

Ultimate sandwich combos are:
Classic BLT
tuna, mayo, black olives and raw spinach leaves
Chorizo, brie and pesto (great in a panini)
Raw spinach leaves, chicken, sriracha mayo and finely diced peach (tastes better on toast)

If we are including toast, then toasted brown bread spread directly with tomato puree from a tube (and a layer of cream cheese if you wish). You could add a few pine nuts but you'd have to press to get them to stick on....

Thanks to this thread I had a filled roll last night for dinner.

White roll, mustard mayo, jarlsberg cheese, mortadella with a pickled dill cucumber on the side. And some white wine.

It was perfection itself. (I repeated for breakfast today- not the wine though).

Cream cheese, smoked bacon, rocket & chilli jam in a lightly toasted bagel.

When I was a child it was white bread with salted butter and golden syrup.

Ta all. Still waiting for the best coronation chicken recipe. I had it once at a lunch that was hosted by an English lady but have never been able to replicate it. Is it apricot jam? Are there sultanas? I assume the chicken is poached.

This is my Mum's recipe (she's not called Lynne, it came out of an ancient 1970s book called Clever with Cream)

fry onions in the oil til soft, add the curry powder, tomato purée, apricot jam and then cook out. Then add the chicken stock and reduce until thickened. Leave to cool. Add the mayonnaise, salad cream and whipped cream (except we never use the cream, you could also put Greek yoghurt in instead)

i usually use roast chicken, I use all the bird and this is a good use for leftover Sunday roast carcass/leg meat which we aren't that keen on as it disguises it. But it's definitely best made with chicken breast. If I cook breasts specifically for this recipe I just gently cook the breasts in the oven but steaming would work equally well.

hmm think I might have to make this for the weekend. We love it, it's a lighter, wetter coronation chicken and lovely on an open sandwich or in a wrap. In fact I don't like coronation chicken as it compares unfavourably to this. You could add sultanas if you wanted, I think I'd cook them with thr onions so they absorb the stock and plump up
