I want to make a cake that DH can grab a slice of after school.

So will last a few days, is filling and sort of healthy.

Does carrot cake count? Something along those lines but I'd rather it didnt involve any sort of frosting.

P.S when I make the no bake peanut butter bars I double the recipe because you only get 8 smallish squares or bars which don't last long in this house. I also add some mixed seeds to mine for extra crunch.

https://swedishspoon.com/gingerbread-cake/

Fits perfectly in a standard 2lb loaf tin or a 6-fup bundt. It's a proper cake, but with no icing and relatively low in butter. Also happens to be the most delicious and easy cake.

dl =100mL - not sure this measure gets used in UK.

I make it with natural or Greek yoghurt instead of soured cream, as I usually have some in the fridge and it's just as good. I also use caster sugar instead of brown and 2tsp baking powder instead of bicarb (I've also used self-raising flour and left out the baking powder/bicarb altogether).

The recipe book this is from is a Swedish staple and has lots of similarly simple recipes, mostly free of icing. It's published in English as 'Swedish Cakes and Cookies'. Would highly recommend.

Soft and spicy Swedish gingerbread cake (not just for Christmas) – Swedish Spoon

Swedish gingerbread cake, or mjuk pepparkaka, is an underestimated treat that may be most strongly connected with Christmas but can be enjoyed at any time.

This looks fantastic @MrsW9 , what is ‘dl’ as a measurement, please? I can’t cope with indeterminate volumes like ‘cups’z.

Thank you!

Her post that you've quote says 100ml.
Decilitre - meaning 1 litre or 1000ml divided by 10, so 100ml.

It's cake, it's not a healthy food.

Equally how is it a 'healthier' flapjack when it is all held together with butter and golden syrup?

Just as long as it's not smothered in buttercream surely would do.

Its quite disappointing that people keep using the term healthy food and you're saying 'its not a healthy food'

There is no such thing as a healthy or unhealthy food. Most food has varying levels of different types of nutrition in it

OP could make a carrot cake, she could make a chocolate cake with beetroot in it, others have posted about cakes containing ground almonds etc

A flapjack contains lots of good nutrition, dried fruit, oats, OP could add seeds and nuts in it. The addition of butter or honey doesnt make something unhealthy or take away from the nutrition of the other ingredients.

Yes, 1dl is 100ml. I did weigh the ingredients once while measuring so that I could do it all on the scales in future, but I lost it and have been meaning to get round to doing it again. I will post back here when I have!

So sorry, I missed the explanation of a dl in your post.

In my haste to get at a gingerbread recipe, no doubt.

I can cope with 100mls , all will be well.
