Give me your best 'cake for teens when they come in from school' recipes

I want to make a cake that DH can grab a slice of after school.

So will last a few days, is filling and sort of healthy.

Does carrot cake count? Something along those lines but I'd rather it didnt involve any sort of frosting.

I love flapjacks because it's so easy to pop in extra fruit, nuts seeds. You can substitute all or some of the golden syrup with honey if you want to avoid syrup.

I do almost all of the above as same as you, I’d rather the DC have homemade treats than processed ones. Couple of things that I don’t think have been mentioned so far are muffins (if you want one heavy with fruit, seeds and other good things look up morning glory muffins) and peanut butter biscuits (I use the three ingredient recipe that is basically nut butter, sugar and egg).

I am not sure we can kid ourselves its healthy...but it has apples in and will easily keep a few days (if it lasts that long).

I made parkin last night. Really quick and easy to make. It's a ginger and oatmeal cake. Not exactly healthy though as it contains a lot of butter, syrup and sugar.

Blueberry loaf works well, and there are loads of recipes around that substitute the sugar for pineapple juice or yoghurt.

1 large apple (any kind) peel, core and dice. Season with cinnamon and or nutmeg then cover in the same weight of flour and leave for at least 2 hours in a warmish place (room temperature is fine).
Beat margerine and demerera sugar (each weighing half the weight of the apple), then mix in an egg. (Optional - at this point add a handful of sultanas to the apple and flour and mix so they're coated in flour.) Then combine the apple flour (sultana) with the margerine, sugar and egg.

Make the quantity you wish using the 1 large apple to 1 egg ratio.

Bake until a skewer comes out clean.

Optionally you can sprinkle the top with cinnamon, nutmeg, and or demerara sugar before baking.

It's very filling!

Otherwise you / he could make crêpes that he could eat with banana, strawberry, a bit of honey or dark chocolate chips? The only 'unhealthy' ingredient is a bit of butter to cook them in, but it's less than you'd put on a couple of slices of toast.

You can make a chocolate cake, 8 ounces of butter, sugar, flour, 2 ounces of cocoa, not hot chocolate, and four eggs. Mix it and put it in a loaf tin.

Lemon drizzle cake would be good, too.

Back in the day my go to for quick, simple and cheap was rock buns. They take minutes to make and are just flour, butter, sugar, eggs and dried fruit. (Plus a bit of ground mixed spice and baking powder) I used to get the Tesco value dried mixed fruit and half a bag would do 12 big buns.
any old fashioned recipe will do. You can reduce sugar too if you want.

Also what about porridge/overnight oats/muesli - or baked porridge bars. They can be sweet but not sickly and much healthier than cake for every day.

ooh this makes me think back to cakes being served in chalets after returning from a days skiing. Definitely go for loaf tin options. I hate bananas but do like banana bread, lemon drizzle, coffee and walnut, chocolate and almond... 😋

Not a recipe, but a suggestion: I like to have homemade cake on hand to offer guests (and, of course, to eat ourselves), but wasn't happy at the amount of sugar in most recipes, so I've been quietly experimenting with Pure Via sugar alternative over the past year or so. I can't taste the difference and no-one else has commented, so I think my experiment has been successful. Pure Via comes in various forms - Demerara, caster, icing, etc - but admittedly, it's not as cheap as sugar.

@siblingrevelryagain please could you share your recipe with the Peanut butter? I've refused to buy any more tahini, DCs use 2 spoons then it lies around unused!

I use dried chickpeas as they’re so much cheaper (always forget to soak so I pressure cook for 50 mins from dry in an instant pot). Works just as well with tinned.

chickpeas
peanut butter (1tblsp per tin/300g ish cooked chickpeas)
large dash lemon juice to taste
lots of salt to taste
couple tblsp olive oil
couple of ice cubes whilst mixing in blender to correct consistency

if I could be arsed and it was for people other than my non-fussy teen, I might de-skin the chickpeas for a smoother texture, but it’s really just what suits best and sometimes life is too short.

Play with quantities (go easy on all the additions like salt/lemon/oil and keep tasting and adding)

i have a stash of canned pumpkin (the American style stuff) but you could make your own when pumpkins are cheap after Halloween. I imagine it would work with butternut squash too but I’ve never tried.

these ‘cookies’ are also good; I add peanut butter and seeds for more protein (I’m making some today as a good breakfast my GCSE boy can eat in the way into school pre-exam. Will be one less thing to go in the morning and I’ll know he’s had good breakfast)

Sugarfree muffin recipe sweetened with honey. Can substitute a bit of wholemeal for the white flour but not too much. Best results if the honey is somewhat between thick and runny. Comes out light and fluffy. Please enjoy and share the wonder of it!
