Give me your best 'cake for teens when they come in from school' recipes

I want to make a cake that DH can grab a slice of after school.

So will last a few days, is filling and sort of healthy.

Does carrot cake count? Something along those lines but I'd rather it didnt involve any sort of frosting.

It's cake, it's not a healthy food.

Equally how is it a 'healthier' flapjack when it is all held together with butter and golden syrup?

Just as long as it's not smothered in buttercream surely would do.

I did say 'sort of healthy' and the flapjack recipe does state it has 'a bit less butter than normal'

Actually I'm fine with butter.

I'm not kidding myself it's kale, but would rather my 6ft teenager came home and ate homemade cake rather than processed shit from the petrol station. That's my aim.

These recipes are great, thank you.

I feel you OP; I have two of those (27 & 15, both over 6ft).

whenever you can, add stuff to recipes to keep them fuller; so nuts/seeds/nut butter in cakes and flapjacks
cheese scones
homemade hummus (I have the best recipe using peanut butter; honestly doesn’t taste any different to tahini and is a fraction of the cost. I am a hummus purest too so I know my shit!)
crackers and cheese
cheese oatcakes

Kazeragi · 05/05/2024 12:03

@siblingrevelryagain please could you share your recipe with the Peanut butter? I've refused to buy any more tahini, DCs use 2 spoons then it lies around unused!

Do your kids like fruit cake?

When we were kids we were given bread pudding, nothing is as filling. It was always made with old bread, the crusts and heels, any bread can be used

Bread pudding recipe | Good Food

This simple bake is lovely with tea, or custard or ice cream for dessert, from BBC Good Food magazine.

This is lovely really easy and lasts a few days.
Any old jam will do doesn't need to be posh!!

We tend to cycle through:
Flapjack
Sponge cake (vanilla, chocolate, cherry, chocolate drops)
Chocolate chip cookies
Fruit crumble
Brownies and blondies (with nuts or fruit added)

Not all cakes, not healthy, but get eaten!

Banana cake!

drawnfrommemory · 05/05/2024 12:24

We are fans of loaf cakes in this house - things like banana bread, tea bread that sort of thing. Last well, easy to slice and if they do get a bit dry after a couple of days, taste great with a scrape of butter.

Something like this: https://www.bbc.co.uk/food/recipes/earl_grey_tea_bread_48452

Earl Grey tea bread recipe

Earl Grey tea bread recipe

Mary's tea cake has bags of fruit plumped up in Earl Grey tea. Then it’s a quick stir-together job and a couple of hours later, voila, the perfect tea loaf.

Banana bread with peanut butter, walnuts and chocolate chips. It's filling and delicious - also lovely the next day toasted, so long as it doesn't fall apart in the toaster.

Tahini is so good in salad dressing! A tablespoon or two in a normal vinaigrette elevates it into something altogether different.

Good old fashioned fruit cake. One solid with dried fruit, not just a sprinkling of sultanas. Filling, and keep well.

GrazingSheep · 05/05/2024 12:38

It’s not cake but I make seeded soda bread.

RedRobyn2021 · 05/05/2024 12:39

I often make lemon drizzle, banana cake, carrot cake, chocolate cake in a loaf tin, makes it really good for slicing. Those saying it's unhealthy, no it isn't not compared to UPF. I often don't use as much sugar as the recipe calls for either.

Lilacdew · 05/05/2024 12:39

Low sugar banana bread made with almond flour. Something like this recipe (scroll down for ages to get the actual recipe) with cinnamon and chips of dark chocolate thrown in.

Date and walnut cake? https://www.bbcgoodfood.com/recipes/date-walnut-loaf

Carrot cake definitely fits the category, especially with cream cheese frosting.

I do flapjacks, banana loaf and sometimes malt loaf. I'm going to try making drop scones tomorrow, following this recipe and adding in a tablespoon of ground flaxseed for nutrition. bakingwithgranny.co.uk/recipe/drop-scones/

If it doesn't have to be sweet then savoury muffins are an easy way to batch cook vaguely healthy snacks,

hamsterno1 · 05/05/2024 12:49

Tea bread looks great.

DS hates bananas and can sniff them a mile off which is really annoying.
