Give me your best 'cake for teens when they come in from school' recipes

I want to make a cake that DH can grab a slice of after school.

So will last a few days, is filling and sort of healthy.

Does carrot cake count? Something along those lines but I'd rather it didnt involve any sort of frosting.

I use dried chickpeas as they’re so much cheaper (always forget to soak so I pressure cook for 50 mins from dry in an instant pot). Works just as well with tinned.

chickpeas
peanut butter (1tblsp per tin/300g ish cooked chickpeas)
large dash lemon juice to taste
lots of salt to taste
couple tblsp olive oil
couple of ice cubes whilst mixing in blender to correct consistency

if I could be arsed and it was for people other than my non-fussy teen, I might de-skin the chickpeas for a smoother texture, but it’s really just what suits best and sometimes life is too short.

Play with quantities (go easy on all the additions like salt/lemon/oil and keep tasting and adding)

sorry, I forgot to add 2 cloves garlic (or one frozen garlic cube)

Brownie Baked oats! They honestly taste like cake but with healthy ingredients. So easy, all ingredients into the blender and straight into the oven.

you could also make a type of granola and they have a bowl when they come in from school;

mix oats in a large bowl with a couple tblsp honey or syrup, couple tblsp melted coconut oil or butter, add cinnamon (optional) and toast on a baking tray/roasting dish at 180 for 15 mins.

when cooked, mix in nuts, seeds and dried fruit to your liking. Serve with full fat Greek yoghurt or milk

French lemon yogurt cake

For the cake:
grated lemon zest from 1 large lemon (3 small)
1 cup granulated sugar (bit less)
3 eggs
1 cup plain yogurt or Greek yogurt
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ cup olive oil

For the glaze:
¼ cup fresh lemon juice
¾ cup of powdered sugar

Grate the zest and mix well with the sugar. Do all the wet ingredients except olive oil, add the dry, stir in olive oil last. Don't over mix .

Back 180 until wooden pick comes out clean

Note: it's a cup of sugar but I do about 2/3. More or less lemon is fine although we like it lemony. I don't do the glaze and it's plenty sweet.

I make this banana cake, with or without choc chips and/or walnuts; and this flapjack several times a month. I stir ground almonds into the flapjack before baking. Holds it together better and adds protein - DS hates peanut butter.

I use this site all the time. I've made dozens of things from it and never had a dud.

We love the pretzels/pretzel bites, particularly with a cinnamon sugar dip. They are made, baked and eaten in an hr. They won't last more than a day at their best though, but can be frozen after baking, and a dozen at a time popped straight from freezer to oven for 10mins for fresh bites of deliciousness.

It's best served straight from the fridge and would last a week if everyone left it alone.

Muffins tend to last longer here because the size is portion controlled instead of cutting themselves massive slices of cake. 😅

I make oatmeal, buttermilk muffins with frozen blueberries or frozen raspberries. Most recipes use sunflower oil so they are super easy to mix up quickly.

Barabrith goes down well here too, and French yoghurt cake.

Well like everyone else said seeds , nuts . fruit (no sugar)or even oats stick to natural ingredients .I believe there are lots of old recipes for seed cakes .

This is like another world!! If ever I wanted evidence of how much parenting has changed, this thread is it.

I'm still in the toddler stage, but the idea that there would be cake when teens get home from school is making my inner teen salivate!! I was a latch key kid whilst still in primary school. I'd often raid my mums snacks and then get told off for it. Otherwise there was fruit...or waiting till dinner.

You're all excellent parents, and on behalf of your kids...kudos and well done for baking them something specifically as an after school snack!!

My inner latch key kid is remembering post school super noodles and cup a soups and rolling her eyes, but as a new mum now myself I think this is so sweet. I hope I have the time and energy to bake a post school treat for mine when she's old enough.

Bara Brith is your friend...

250g dried fruit, soaked in 300ml tea
250g self raising flour
125g sugar
1 egg, beaten

Soak the fruit in the hot tea until it has gone cold. Beat the flour, sugar and egg into the fruit-and-tea mixture, then tip the batter uinto a greased and floured 1lb loaf tin. Bake at 160°c for 50 minutes. Cover with foil during cooking if it is browning too much. Cool the cake in the tin.

Me too if I'm honest.

However the difference is probably that when I was a teenager I had my tea at about 5:30 (usually in front of Neighbours).

So waiting for dinner wasn't so bad.

Often we don't eat dinner until 8, and DS isn't keen on school lunches so he's starving when he gets in and can't wait 3 or 4 hours.

I made do with Jaffa Cakes but he is spending a fortune on processed shit.

The tins were always full when i was a child/teen. Mum was a great baker which puts me to shame as mine are always empty! My teens buy rubbish on the way home from school which I don’t like, so this thread is inspiring me to get cracking and roll out some healthy-ish baking 😋

Mine ate frittata ( well, crustless quiche) , drop scones and cheese after school : not necessarily any healthier than cake but it didn't reinforce the 'grab sweets as the quick snack' idea.
That said, a danish apple cake with almond flour has to be pretty protein dense and high calorie so only a small slice needed for satiety.

Actually yes to crustless quiche as an idea.
I'd forgotten that I used to put omelette mixture into a muffin tin and bake so you get quichey/ omlettey muffins. They were great ( imho)!
