Help I have veggie foodies coming for dinner

well one of them is veggie
one eats fish
one doesn't eat lamb
the other eats anything

So I guess I could go for a combo starter eg antipasti type thing with some fish and some veggies

What can I do for main?
Not pasta pls

Or alternative starters welcome

Pref stuff than can mainly be prepared in advance?

Was thinking something mushroomy maybe?

Dh did the nigel slater recipe last night (with butternut squash rather than pumpkin) - it was v good but homely rather than elegant - I don't know what etiquette is for a London dinner party!
Or you could try quiche/tart -sounds boring but depends what you put in it - I did a goats cheese and courgette one recently and it was rather nice. Better for lunch though.

Butternut Squash, Lentil and chickpea stew here.. Prepare in advance and slow cook. Serve with loads of crusty bread and rice
