Help I have veggie foodies coming for dinner

well one of them is veggie
one eats fish
one doesn't eat lamb
the other eats anything

So I guess I could go for a combo starter eg antipasti type thing with some fish and some veggies

What can I do for main?
Not pasta pls

Or alternative starters welcome

Pref stuff than can mainly be prepared in advance?

Was thinking something mushroomy maybe?

do good chips and dips for starter, poncy blue corn chips and poncey pesto with spiced nuts and good mayo and crudites,

Yes SW.
It was better than living in Russia and putting used bog roll in a plastic bin.
Unspeakably grim memories of a weekend of 8 people sharing a two bedrommed flat in depths of winter.

I just don't get the penchant for mashing up vegetables.They are great, why hide them?
A bowl of lightly steamed young 'uns with some aioli would be great.

Are you any good at cooking curry? Could do potato, chickpea and spinach, with mutaar (?sp) paneer and rice. Buy in some naans and do a fish or meat curry as well if you wanted. Followed by good ice cream and biscuits maybe.

Olive oil in the bottom of a le creuset pan, 3 cloves crushed garlic, 2 chopped onions, a handful of torn basil leaves, 2 thickly sliced aubergines, a carton of passata, a tablespoon of capers, a couple of tbsps of olives (green, black, stuffed, sliced - it doesn't matter as long as no stones). Serve with shavings of fresh parmesan and more torn basil, good bread and a crisp green salad. Foody heaven.

CD - I did www.waitrose.com/recipe/Mediterranean_Tarte_with_Fresh_Pesto.aspx this last week - it was a piece of piss cake and really tasty - even the 'tearing-flesh-from-bones' menfolk went for seconds!!!!
Served with mixed rocket salad and warm potato salad.
Really only took 10 - 15mins to prepare.

Excuuuuse me Moondog - That wellington is blardy delish I tell you! Not at all unidentifiable lovely tasty chunks of chestnut mushroom, tearragon ... and I am not at all defensive

Still a nice simple tray of Roasted Mediterranean veg in a good quality olive oil with rosemary and garlic always looks and tastes lovely if you like to keep the veg semi whole
