Anyone else starting to think about getting their arses back in gear?!
Mine for the next week
Tomorrow: baked Camembert with nice bread (not quite over Christmas yet!)
Saturday: Thai green veggie curry
Sunday: NYE - will be sitting in with a dog terrified of fire works, might just order a pizza
Monday: Tuscan bean stew and sourdough
Tuesday: west African peanut stew
Wednesday: some sort of pie with all the leftover veg
Thursday: gochujang tofu

Last week was mostly eating out or on the fly. This week I am aiming for better and did some prep work yesterday/today for that.

Friday was a pack of sausage rolls heated up when I got in from the airport.

Saturday, I had scallops on white pudding for starter, and a tuna steak with Parmesan/lemon courgettes.

Tonight, I am roasting a small joint of lamb with lemon pepper/garlic roasted baby potatoes, leftover courgettes and cauliflower cheese.

Tomorrow will be Greek lemon chicken, the other half of my potatoes (I prepped a 2 person batch but will only roast what I need each night), my last 3 French beans from the vine, and probably either roasted tomatoes or roasted med veggies (onion, garlic, courgette, peppers, tomatoes and mushrooms).

Tuesday I am doing chicken fajitas and will make some guacamole to go alongside.

Wednesday I am going to enjoy some pepperoni I brought from home (cannot get it here), for a proper pizza (shop bought pre-rolled dough, readymade sauce but proper Italian mozarella ball and pepperoni).

Thursday I have an event so will get proper lunch in the canteen - whatever is good on the day. But possibly prep some carrot sticks in advance for hummus dipping in case I get home hungry.

And either Friday (if not too exhausted) or Saturday will be a proper steak dinner as I brought that back with me also. (Vac packed and good until 30th).

Other things I need to use up in the next 10 days include hot smoked salmon (either over lunch salads or something with pasta I guess), salad leaves, hummus, bacon lardons (probably with mushrooms and pesto rossa on pasta or for salads) and an M&S boeuf bourguignon (good until 6th Nov but will need fridge space for feeding visitors the following weekend).

I had forgotten how good/bad my freezer is...it's a bit full.

DH wants some chilli I made a while ago when he gets here Wednesday week (I forgot o bring home a couple of portions for an easy Friday dinner last week), and will defrost a couple of my size portions of the veggie version for DD as she's likely to want "food" on arrival the following day. And I'll cook some chicken to have ready to eat in the fridge as well.

Thursday night, there will be 5 here, and I plan to cook for them but need to think about it (no mushrooms, preferably not chicken or pork, low sugar, ...all to cater to 1 of the guests).

Friday and Saturday will both be out in restaurants (8 people, 1 will be casual and the other fine dining for a special occasion).

Sunday will be back to just DH and I for 1 last night before he leaves Monday - my current thoughts are fish (salmon or cod) or chicken as lighter options after a heavy weekend.

Before back to being solo and looking for tasty but convenient options. Like the mushroom risotto, plenty more beef or veggie chilli, couple more bags of chicken pieces in fajita marinade, chicken breast in Greek lemon marinade to bake, 1 chick tilkka masala, and a large pack of country sausage meat (I like it as meatballs with pasta and veggies).

tomorrow: Thai noodle soup
Wednesday: freezer tea
Thursday: Harissa lentil and chickpea stew and flatbread

Today: Mushrooms risotto(mushrooms season started and we got some from our favorite forest :))
Today's dinner: French onion soup with some homemade bread
Wednesday: Gonna try making homemade big mac burger, I have seen a yummy recipe on my feed!
Wednesday dinner: Quiche with leek
Thursday lunch: I will go for a chili sin carne
Thursday dinner: most probably
Friday lunch: a nice butter chicken, such a long time I have not made one with soft naans slurrp....
Friday dinner we usually make some yummy, less healthy food, I'll maybe go for croque monsieur
And for the week end still not thought about it ;)

We must have missed a meal, plus the lasagna landed up being huge so was for 2 meals, so I STILL have the bloody savoy cabbage for the Jamie Pancetta dish (hopefully it's still okay - cabbage lasts forever after all, plus I have some cavalo nero i can add). I also still haven't done the pizza!

So...

Tonight: Jamie Oliver pancetta/savoy cabbage thing
Tomorrow:Something cooked low and slow because it's what I feel like - to be decided once I see what good meat options are at my local meat counter. With mash or rice.
Saturday: Pizza
Sunday: Friends coming round so making lamb shwarma type thing with a big slow roast lamb shoulder, flatbreads, and various additional fillings/sides etc.
Monday: must be fish. We haven't had fish for ages. Veg. Wedges?
Tuesday: Aubergine Curry
Wed: Tomato and chorizo pasta
Thursday - something based on what's in the freezer and how many people are actually home!

I'm recovering from a hideous virus is which is making me cough so much that eating most foods sets off the coughing, so my plans for next week are going involve as little work as possible.

Sunday: Dal and rice
Monday: going to Yo! Sushi for DD's birthday.
Tuesday: bread and supermarket soup.
Wednesday: DH to cook pizza
Thursday: fried eggs, frozen mash, green salad
Saturday: curry from the freezer.

tonight: pizzas at the pub
tomorrow: veggie “beef” stew with mash and savoy cabbage
monday: lasagne (meat for DH and DD, veggie for DS and I. Will be a pain making two but will do double portion so next time it’s just straight out of the freezer)
tuesday: fish pie (salmon steak for DD) at lunchtime as I’m working in the evening so will leave the others to make themselves grilled cheese sarnies later
wednesday: risotto. Haven’t had one in ages. Probs mushroom with crispy lentils but might roast up some butternut squash as well
thursday: DS’s birthday and he still needs to tell me what he wants me to cook
friday: out for a Japanese tasting menu for DS

Sunday - Slow cooker french dip sandwiches with proper chip pan chips cooked in dripping with Yorkshire salad.
Monday- Paccheri with spinach, cherry tomatoes and pesto and garlic bread.
Tuesday- Copying @OffTheWalll and having tandoori chicken with kachumber salad. Will make an Indian potato salad, raita and spiced onions and have with a roti and lime pickle. Maybe a cheeky onion bhaji on the side.
Wednesday- leftover tandoori chicken turned into a spicy fried rice affair with spiced roasted cauliflower.
Thursday- Cottage pie with broccoli, cabbage and peas.
Friday - Gołąbki

Home from a long weekend and trying to figure out a plan for this week. I'm thinking:

Tonight: Shashuka
Tomorrow: Baked potatoes with tuna mayo or egg mayo, and cheese
Wednesday: Out for friend's birthday. DH to figure something out.
Thursday: Greek salad pasta
Friday - Greek turkey meatballs in pitta with Greek salad
Saturday - Chicken noodle soup and crispy duck pancakes.

I forgot we're throwing a halloween party! So doing early shopping to arrive in time for that, and meal planning from there. Does feel relentless though. I might have to start goign into work for a client a couple of days a week so I'm going to have to get smart about how I manage food at that point. Sigh.

Thursday - burgers and hot dogs because I have too many kids to feed and it's the easiest as DH can do it on the BBQ, even if it rains, while I'm wrangling the over-hyped little buggers inside!
Friday: Oxtail stew (the rest of the family will whinge. I don't care).
Saturday: Pasta - I think bacon, mushroom, courgette, chilli and tomato
Sunday: Baked chicken pieces with potatoes and veg
Monday: Aubergine curry (was supposed to be this week but won't be happening)
Tuesday: Taco bowls - mince, guacamole, cheese, sour cream, pickled onion etc

Risotto was dry and unappetising when I defrosted it...so I've taken out a piece of salmon to defrost in a hurry and bake, to serve with wilted spinach and leftover steamed baby potatoes that I will fry up.

Have changed Saturday's duck plan to pienirli as I've realised I'll need to use up the salad after tomorrow's dinner.

The week after that is tricky as I'm out a lot and also away on holiday from next saturday so I want to make sure all the perishables are used. Current thinking is:

Saturday - Pienirlini
Sunday - Out for DH birthday
Monday - Omelettes with roasted veg
Tuesday - Veggie Chilli
Wednesday - Tuna rice
Thursday - Out at a work event
Friday - Gnocchi and roast veg gratin.

This may well change.
