Last week was mostly eating out or on the fly. This week I am aiming for better and did some prep work yesterday/today for that.
Friday was a pack of sausage rolls heated up when I got in from the airport.
Saturday, I had scallops on white pudding for starter, and a tuna steak with Parmesan/lemon courgettes.
Tonight, I am roasting a small joint of lamb with lemon pepper/garlic roasted baby potatoes, leftover courgettes and cauliflower cheese.
Tomorrow will be Greek lemon chicken, the other half of my potatoes (I prepped a 2 person batch but will only roast what I need each night), my last 3 French beans from the vine, and probably either roasted tomatoes or roasted med veggies (onion, garlic, courgette, peppers, tomatoes and mushrooms).
Tuesday I am doing chicken fajitas and will make some guacamole to go alongside.
Wednesday I am going to enjoy some pepperoni I brought from home (cannot get it here), for a proper pizza (shop bought pre-rolled dough, readymade sauce but proper Italian mozarella ball and pepperoni).
Thursday I have an event so will get proper lunch in the canteen - whatever is good on the day. But possibly prep some carrot sticks in advance for hummus dipping in case I get home hungry.
And either Friday (if not too exhausted) or Saturday will be a proper steak dinner as I brought that back with me also. (Vac packed and good until 30th).
Other things I need to use up in the next 10 days include hot smoked salmon (either over lunch salads or something with pasta I guess), salad leaves, hummus, bacon lardons (probably with mushrooms and pesto rossa on pasta or for salads) and an M&S boeuf bourguignon (good until 6th Nov but will need fridge space for feeding visitors the following weekend).
