Anyone else starting to think about getting their arses back in gear?!
Mine for the next week
Tomorrow: baked Camembert with nice bread (not quite over Christmas yet!)
Saturday: Thai green veggie curry
Sunday: NYE - will be sitting in with a dog terrified of fire works, might just order a pizza
Monday: Tuscan bean stew and sourdough
Tuesday: west African peanut stew
Wednesday: some sort of pie with all the leftover veg
Thursday: gochujang tofu

Oooh bhaji burgers look amazing!!

DS is back from uni and only eating “Real Food” 🤔

And doesn’t want “any white carbs or anything unhealthy or with more than a few ingredients” and “lots of lean protein”

Gak.

I refuse to cook separate meals and don’t want to ostracise him so think the majority of meals will need to work around it.

Tonight we have chicken souvlaki (marinaded chicken thighs in lemon juice garlic oregano ), homemade tzatziki (cucumber, yoghurt, ex voo, garlic, dill, mint), flatbreads (DS won’t eat) plus cucumber tomato and red onion

Other nights I’ll do:
Salmon tacos with slaw and salsa
Steak with sweet potato wedges and salad
Greek salad with poached chicken on side
Maybe a traybake with chicken thighs, lemons, some root veg - any recommendations?
Lemon chicken with broccoli and green beans (and mash for DD)

Finally came up with a plan and did my big shop this afternoon:

Had Greek style roast chicken quarters with Cyprus potato wedges, Greek salad and tzatziki tonight.
Tomorrow will be tortilla with green salad and mixed bean salad
Tuesday - Chorizo broccoli pasta
Wednesday- chicken, mushrooms and green beans in creamy pesto sauce with rice
Thursday - Gnocchi and roast veg bake
Friday - at a wedding evening reception, will have a quick sandwich between finishing work and leaving the house and hoping for a decent buffer!
Saturday - Marry me-style butterbeans with chicken breast
Sunday - haggis lasagne

No potatoes this week! She did bring massive yorkshires back though, so they were used for tea. Woth left over beef brisket, roasted broccoli and carrots, mustard mash.
Whilst that was cooking I managed to pop some potatoes in the oven to bake, roast some fennel for the fennel and sausage pasta, whipped up a morrocan style beef and prune casserole, some Asian inspired pork mince and marinade some halloumi for tomorrow's tea. Felt like I accomplished a fair amount in no time. It's exam season, so I know we have plenty of good food ready when I get home from work.

Still on track for weekend dinner plan and now sorting out the week ahead:

Monday: Leftover lasagne from sunday
Tuesday: Spanish eggs with potatoes, chorizo and peppers
Wednesday: I have a work event with dinner - think DH will sort out baked potatoes
Thursday: spaghetti and courgetti mix with pesto and cherry tomatoes
Friday: Mediterranean rice
Saturday: Tarragon chicken and new potatoes
Sunday: Spaghetti carbonara

I have lost complete track as we keep getting side tracked. which is also messing up my shopping. DD is lactose intolerant (and probably a few other things) AND a fussy eater but she's been very bloated with a sore stomach, so I realised we'd slipped into lettng her live on a very limited diet etc. so I'm trying to be a bit smarter about that as there's no doubt that the rest of us really benefit from eating 30+ plant foods a week and she had slipped to way too few. Bless her, she understands the importance so is doing her best to put some effort in and try things too.

So for next few days:
Salmon and leek pasta (she won't eat that so she'll be having a chicken breast with veg).
Saturday - we're out
Sunday - Chicken breasts done somehow for everyone to eat.
Monday: Spaghetti and meatballs with added hidden veg.
Tuesday - maybe a cottage pie (lots of extra veg variety in the mince) with olive oil mash which I might mix some butternut into.
Wednesday: fish for the rest of us. DD TBD

That's about as far as I've got right now.

Sunday: beef enchiladas
Monday: Spanish fish stew
Tuesday: tomato baked gnocchi

I ended up sticking to the plan the first half of the week, but doing a pesto Rossa pasta with bacon and mushrooms, and a steak with chips and a chicken breast roasted on med veg with roast potato chunks for Wed-Fri.

The plan tonight is the sweet'n'sour pork, I think.

I want to get chicken joints to do feta chicken, and chick thighs to do tarragon chicken for the weekend.

Chick tikka masala
Piri piri chick

For the rest of the week - probably.

My plan went a bit sideways, but I have managed to stretch everything to add a few more days on between shopping deliveries. So I'm hoping to do the same again this week. It's coming tomorrow evening, so I've dug a celeriac curry from the freezer, and we have the roast potatoes, so I'm going to serve the with curried spinach tomorrow.

Then the rest of the week is..
Chicken, potato salad, salad
Bhaji burgers, thanks whomever suggested that
A bean/sundried tomato/spinach dish I saw on insta served with salad and nice bread
A birthday tea (whatever is requested)
Pork burgers
Pasta bake
Puff pastry something.

Also going to try make no churn strawb ice cream.

a bit basic this week and DS on DofE most of it

Today: ate sushi out
tomorrow: got some of those vegan marble steaks on offer, might be shit and def over priced normally but we’ll try them out - venison steaks for the omni’s - with wedges and broccoli
Tuesday: fish fingers for DD, veggie sausages for DH and I, mash and peas
Wednesday: salmon fillets for DD and DH, tempeh for me, rice and green beans
Thursday: Happy Pear Lasagne but adding TVP for protein
Friday: at a friends for dinner

I already changed things. I did Sunday's plan of tarragon chicken but did plain roast chick thighs on Saturday.

Tonight, I got home early so made mushroom risotto.

I have chicken tikka masala and Bombay Potatoes defrosting for tomorrow.

Wednesday will be something easy, possibly involving bacon and pasta or steak.

Thursday, I might be out with visitors, but I have a 4 cheese pizza in the fridge just in case.

Unfortunately, I am going to miss the proper pizza at home on Friday but DH and dd will enjoy it. I'll probably have a half a steak and some oven chips.

Just a quick one to thank whomever suggested the curried potato idea to use up roast potatoes. Did ot tonight, with onion, garlic, ginger, turmeric, garam masala, cauliflower and spinach. A few splashes of water and they were so good. Served with a celeriac curry I had in the freezer. Quick, filling and delicious

It was me. So glad it worked! I've never done it myself, but might well give it a try now.

Yesterday was really simple but very delicious - good bread, mushroom and spinach omelette, a salad.

Tonight dp made a chilli - it was fine, but it's not my favourite thing.

@RemusLupinsBiggestGroupie thank you again! It was good. O added a good sprinkle of salt and a squeeze of lemon too.

Tonight we had katsu chicken, rice and roast broccoli. My son made it, and before I make it sound fancy, I bought breaded frozen chicken and a jar of sauce. We rarely eat things like that, but I was knackered from a bad night's sleep, so it's handy to have something in.

Tomorrow, bhaji burgers and sweet potato wedges. I'll buy nice buns from the bakery, we will make tzatiki and wedges, bhaji from the freezer. Life is busy at the moment, so it's all about balance.

Yesterday- courgette,mushroom and halloumi kebabs with couscous salad and homemade coleslaw

Today- Korean pork in bao buns with shredded white cabbage,cucumber and siracha mayo

Wednesday- pork and herb meatballs in tomato sauce with spaghetti

Thursday- pizzas and salad

Friday-

Saturday- takeaway curry

Sunday- family birthday bbq - rump of beef on BBQ with butternut squash ,feta and spinach salad,asparagus salad with new potatoes and petit pois ,crusty bread and burrata with pesto and tomatoes.
