I would just do a big plate of Iberian ham or parma, with manchego cheese, with some olives as well.

How about a biggish rectangle of pastry on baking tray, cheese on top, maybe a bit of tomato or ham, cayenne pepper, bake in oven til pastry puffs up and cheese is golden.

No no no, tomatoes should not be runny. Maybe cook a bit longer? Maybe you put too many tomatoes in (I'd say 4 or 5 quarters per tart) and perhaps not enough gruyere? Maybe slightly higher cooking temp? Am instinctive type cook, me, and they are always luscious when I do em and I don't even like fooking tomatoes!
