My favourite stodgy lardy pasta dish is from Delia Smith's Complete Cookery Course. It is cheesy macaroni (or Penne, as I make it) with leeks and bacon. It's got LOADS of butter and cream and cheese in it, not to mention fried leeks and streaky bacon, but it is the ultimate comfort food. Failing that, I love some stuffed Tortelloni and make a sauce as follows:
melt a small amount of butter in a pan, add finely chopped onions and garlic and soften. Add a splash of white wine and some single cream. Add a dollop of pate and mix in well until melted. Finally, add finely sliced mushrooms (quite alot of them).
Spoon sauce over tortelloni and top with fresh parmesan.

TheHonEnid · 11/03/2008 10:57

it melts in the butter

when you toss teh pasta in make sure there is a bit of cooking water clinging to it - it mixes with butter and stock cube (which has melted in the butter btw) to make a delish savoury sauce

kind of like a middle class pot noodle
