CUPCAKES! Glorious Cupcakes!!

Yesterday I baked a batch of chocolate cupcakes, and chocoate squares.

I need massive amounts of cupcakes to feed a birthday part of 50 childrens +!

Now I need your recipes for "yellow" cupcakes! IE No chocolate.

I want them tangy, moist, airy, vanilla, or lemon or orange flavoured! I need a mountain of different cupcakes and icing and decorations ideas!

I have one which I made last year for dd1's birthday party - uses yogurt so you can have loads of flavours for different ones and they are LOVELY - brb if you want it?

makes 12 yougut fairy cakes

125g sunflower spread
125 caster sugar
2 medium eggs, beaten
125g pot fruit flavoured yogurt
100g self raising flour

icing is lovely for these -

100g soft cream cheese
40g icing sugar
1tssp marmalade

heat oven to 180 & line bun tin

sunflower spread, caster sugar into bowl with beaten eggs and HALF the yogurt and the s/r flour - beat with electric whisk

cook for 18-20 minutes

beat ingredients for icing all together and spread on cooled cakes - decorate as desired

they truely are lovey and light and depending on which yogurt you can change the taste

I made these for a valentines cake sale and everyone commented on how moist the cake was.

A good really easy idea for decorating cup cakes is to buy a sheet of ready rolled icing and cut out shapes with cutters(I used heart shaped and flower shapes). If you just lay the shapes on the still warm cakes they stick to it. Then I piped swirls of pink icing on top. they looked fab. I also bought food colouring pens for writing on it which is a good way of getting the kids involved.

oh god the pressure, if they turn out crap its obviously your baking and not the receipe they really were very easy and very delicious, we've made them loads since last summer and I just use the wee pots of fromage frais or whatever is in the fridge at the time

can I just say - party with > 50 kids

Just another vote for nigellas recipe from me. It is so quick and easy! (i don't use a blender just cream butter and sugar, then add the rest of the ingredients.) They always turn out perfectly and taste great.

I dont have self raising flour. So my baking efforts will resume monday after Sainsbury delivery.

Carmenere, I was going to do that, but just round, and I have black writing icing to draw spiders... It is a Harry Potter Party.

I can do stars and hearts too. I was planning on doing icing with cream cheese like below and decorate.

Also for the chocolate cupcakes, I am doing chocolate fudge frosting, and adding jelly diamonds in various colours, white choc chip, and also orange and yellow jelly segments. It will be more colourful than sophisticated as my 6 year old will be in charge of decorating!

The photos aren't mine, just one of the sources of inspiration I use to help build up my portfolio of cupcakes, cookies and cakes for my new business venture. I am going to go into home cake making/decorating for weddings, birthdays, other functions etc.

COV - My local parish church is offering a service for everybody booking the church hall for functions where they also offer to arrange the catering. The hall is quite big, and can seat around 200 people, they do weddings, Christenings, Birthday parties, art exhibits, etc.

Thanks everyone. I am really excited about this new venture. My plan is to do as much as I can for family/friends etc over the next year or so and get it all photographed etc. Plus do all the dull but necessary/legal stuff involved in setting up a business, plus do a few courses etc. Then when ds starts school in Septmber 2009 I can really get things going. Hopefully I will be able to fit it in around school hours/evenings so childcare won't be an issue (although perhaps summer holidays and weddings could be a bit of a problem.

Thanks for that info Quint, contacts like that will def be useful.
