What do you eat it with?
i tried it on the side but it blew my mouth off
apparently as a pancake is good but that is a big effort for me

I didn't mean for my kimchi/hummus (kimmus?) recommendation to spark such a heated debate.

I do hope it doesn't put any of you off trying it. It really is the future.

Are there any published studies that say kimchi causes cancer? Tim Spector certainly doesn't mention it when he extols kimchi's virtues.

There is a correlation with kimchi consumption and gastric cancer however there is not a clear causation link. It's. It clear if it is kimchi or other genetic and lifestyle issues. Smoking, drinking alcohol and high stress.
In any case, the amount of kimchi likely to be eaten by any non Korean is not going to cause any increased risk. It is a staple food in Korea and eaten in great quantity. It's eaten at pretty much every meal and not just a little sprinkling. Most Koreans do not end up getting stomach cancer. The benefited of fermented foods are many. We eat many many things in our daily lives that in high enough amounts are not good for us. The regular but small consumption of kimchi will likely not give anyone cancer.

Exactly @journeyofsanity there is a 2005 that has a correlation, but you would need to eat a couple of jars of kimchi daily.

The link seems to be salt intake and not lacto ferments.

Post 2017 research from Korea and Japan indicates that in the majority of cases, kimchi is beneficial and preventative.

I think we can carry on our modest intake and expect beneficial results.
