What do you eat it with?
i tried it on the side but it blew my mouth off
apparently as a pancake is good but that is a big effort for me

The M&S stuff is really disappointing.

You want a SE Asian supermarket for proper kimchi. There will be a choice if brands and types.

I like it chopped up a bit with brown rice for quick lunch, plus grated carrot to mellow it a bit. I also make kimchi mayonnaise to eat alongside onomyaki - Japanese omelette.

I mean… if we are talking that Vadasz raw kimchi stuff you find in M&S… it is fermented and it contains cabbage and bits of carrot, chilli, garlic and ginger.

But it’s not very flavoursome. And nothing like proper kimchi.

I suspect that trendy kimchi of disappointment of this kind is exactly the sort of thing that would lead you to conclude that you don’t like kimchi.

The Vadasz sauerkraut is crap too. I haven’t bothered trying anything else because I’m not a glutton for punishment.

I make it regularly and I eat it with just about everything but dh only eats it with Korean food. Mine is less fiery than some of the authentic Korean versions but friends and family seem to like it.
I’ve got addicted to it.

What's your recipe?? I've tried to make it twice now and it was so awful

Kimchi is delicious. I make my own. It's great as a side with Korean dishes, obviously, but also nice chopped up and placed under the cheese layer in cheese on toast. Or with fried rice and a fried egg. Or kimchi pancake made with rice flour is very good (Meera Sodha has a nice recipe for this). Or kimchi and minced pork dumplings using wonton wrappers.

I love kimchi. There's a lovely Anna Jones recipe - kimchi rice and greens - and because the kimchi is cooked it's not as spicy. It is also delicious in a toastie with cheddar.

Kimchi fried rice is also lovely and so easy to make.

I agree with everyone who mentioned Maanghi. Her videos are amazing. After watching her on Youtube I grew beansprouts using a plant pot during lock down. Inspired by this thread I've followed her recipe for Kimchi pancakes today.

In small doses and depends on fermentation level. I'm not a fan of overly fermented.

I went to Korea as a teenager and they obvs eat it for every meal and by the end of the week, I didn't want to see it again and didn't eat for a few years after

I’ve just opened a jar of this, eaten a teaspoonful and it nearly blew my head off 😵‍💫
It clearly needs toning down for me, what do I try?

I had it in a sort of Korean stew type thing i made on Friday night. It was cracking. The recipe was on Sainsburies online. It was super hot but lovely and did wonders for my cold!
