I'm just sitting down to do some meal planning, having completely lost my way with it over the last year.

I've been at it for half an hour and so far I have:
Sea bass with chorizo, samphire and potatoes for tomorrow
Pizza for Sunday.
Hopefully I get more on my list soon!

kittenkipper · 31/12/2021 17:26

I'm still full of Christmas/ season spirit and still have festive food in, so try not to judge the extreme quantities of cheese 😂

New years day - lunch -French onion soup with roast beef provolone sandwiches to dip
Tea- braised chickpeas and peppers

Saturday -lunch- savoury monkey bread and baked Camembert with veg sticks
Tea- tomato soup with any left overs bread

Sunday lunch- 5 spice roasted goose with Asian style slaw and pancakes
Tea- pate pickles chutneys and toast

Monday- lunch - leftover goose and slaw spring rolls
Tea- Braised cabbage in broth

Tuesday- lunch - Middle Eastern Mac n cheese
Tea- chicken chilli and mango salad.

Wednesday (12 th night) - lunch- dressed crab with blood orange and chicory and fried fruit cake and cream.

Tea- takeaway as I'll have spent all afternoon taking down the decs and cleaning.

RemusLupinsBiggestGroupie · 01/01/2022 16:37

Today: potato dosas and channa dhal, as I fancied a pootling in the kitchen sort of day. Will also make a sambal, some coconut chutney and some sort of salad.

Tomorrow - possibly sausage and mash, or nut roast things and roast potatoes/vege

Beyond that, no idea, but a chilli will feature somewhere and probably omelettes.

Trying to eat less meat this year and love the sound of your smoky tomato and halloumi stew - could you share the recipe? Thanks 😊

Ooh, new thread, new year! I like it. And happy new year to everyone.

Also loving ideas already. I do a similar roasted veg/feta type meal quite often for lunch to @Fivemoreminutes1 but with couscous and I don't usually bother to add the feta to the roasting tray but might try that!

Feeling like Asian flavours after all the traditional English Christmas meals...which is mildly tricky as I don't have a huge repertoire. But for next five or six days I've got:

Salmon with soy/ginger/lime/lemongrass and veg and rice/noodles
Beef stirfry
Butternut curry (with addition of peanut butter thanks to last thread!)
Chickpea and pepper curry
Fajitas
Baked chicken - flavours to depend on how I'm feeling by then but could be soy, sesame and honey etc or my more traditional lemon/garlic

Lellyo · 03/01/2022 20:53

Loving all these ideas, first time on this thread trying to be more organised with meals and shopping.
Would you mind @SpaceOp to share the Butternut curry with peanut butter please?

RemusLupinsBiggestGroupie · 03/01/2022 21:00

Made this peanut butter curry type thing last week. Used pasta, rather than tinned tomatoes. It was ridiculously easy and very tasty.

Thank you just made a note of this for next week
SpaceOp · 03/01/2022 21:45

@Lellyo it's not a recipe as such! It's just the addition of peanut butter to my original cheat thai red curry: So lightly saute some onion and garlic and lemongrass if you have it, add the curry paste and peanut butter and cook for a minute or two. Add half the coconut milk and boil few a few minutes to thicken, then rest of coconut milk, vegetables and water (about same again as for the milk). Then lime juice, fish sauce, sugar and salt at the end. And fresh coriander if you have it (which I almost never do).

RemusLupinsBiggestGroupie · 03/01/2022 21:46

Passata, not pasta btw. Stupid bloody kindle!

SpaceOp · 03/01/2022 21:50

@RemusLupinsBiggestGroupie that slow cooker recipe looks great and v easy - I think I'll give it a try with my usual swap of butternut instead of sweet potato. Thanks!

Lellyo · 04/01/2022 09:49

@SpaceOp thank you for your recipe, also noted for next week as well. Starting to feel quite smug with my menu planning 👍

ruthypfdraper · 04/01/2022 11:10

Can I join? I plan on a Tue as get veg delivery from our local market on Wed.

T veggie sausages, onion gravy, cauli mash
W chicken tagline and couscous
T roasted gnocchi
F turkey mince enchiladas
S Breaded fish and wedges
S roasted red pepper pasta
M carrot and green bean dry curry with coconut yog

WhatsMyNameGonnaBeNow · 04/01/2022 11:13

@generallyfailing That should have said smoky tomato, bean & halloumi stew. For some reason the iPad isn’t letting me paste links today but google Bosh smoky bean stew and it’s pretty much that adapted to taste. I add more veg - peppers, mushrooms etc and use a mix of whatever beans I have in. Top with fried halloumi and have it with slices of baguette/toasted sourdough.

Also very tasty with vegetarian sausages.

I forgot to mention it was from The Spicery veg curry legend book which uses their curry legend spice mixes. Photos of recipe attached, their suggested replacements for their spice mixes below.

Haldi blend- half the amount in turmeric
Methi blend- garam masala
Jeera blend- cumin seeds (or half and half with mustard seeds if you have them)

KobaniDaughters · 06/01/2022 02:50

Found you!! My parents have taken D.C. away for a few days so DH are breaking the norm and deciding each day what to cook together - it’s lovely! Back to planning next week

SpaceOp · 06/01/2022 11:17

I have to say that the butternut and peanut butter in the red curry was another massive win last night. I wasn't entirely surprised as it has gone down well the last two times but I cut the butternut into smaller chunks than normal and for whatever reason, that 100% worked for DS!

@KobaniDaughters aaah, the days of ad hoc food preparation. I always land up eating luxury food like steak and lamb chops in those situations! Enjoy!
