I found the easiest way to do it last week..... flutter eye lashes at DH and watch him sweat and swear over it! LOL!

I've got a cheapy 45p peeler from Asda

its excellent, and peels BN squash easy peasy

stick the squash in the microwave for about 30-60 seconds first then try peeling

Soooo, if you were going to roast a butternut squash, what temperature (gas) and how long? Haven't cooked it for ages as it's such a faff, but if roasting's easy will contemplate it...
