melsy · 26/08/2004 22:30

Would like to make one for dd's 1st birthday , do you think I would be able to get hold of a HUGE paper cup for the base IFYWIM !!!?????or would it be best to make it myself out of baking paper ?? & any ideas on the base to cook it in ?? Want to make it look quite authentically like an old fashioned cup cake. Would also like to make tiny mini ones to sit beside it and give to all the kiddies after, can you get mini paper bases?? oooh and some sugar icing wrapped parcels any ideas ???

Hi Melsy
I've been following this, but just lurking! I'm doing a huge quantity of fairy cakes for my dd's blessing in October.
Re. your problem, I just had a thought.......could you do a victoria sponge, glue it together with buttercream icing and then shape it to look like a fairy cake - ie, 'shave' the bottom at an angle. You'd then end up with a fairy cake looking, fully risen and yummy cake?? Just an idea! You could even then pop it into the large paper case I think you've bought on your hunt to make the giant cupcake?
Good luck

right clever foody dh has jst had another idea , to make it as it is , and combining your idea mit , to then make a 2nd one and cut it into a dome shape to sit on top (glued togther with something inside like choc ganache). Then If I thhckly cover it all in glace icing and allow it to seep insde the edge of the paper , you wont see the join and it will look like a proper fairy cake then. Dh reckons you can never get a high dome rise from a sponge cake mixture , is that right?? Ive just had a look at the piccys in nigellas book and there are none that have a dome top. So were deciding wether to eat this one , save it for party , or make another with a new recipe !!!????

See I said id drive myself maaaaaaad !!!

I use the Nigella recipe - but I'm based in the US and apparently self rising flour here is different to self raising flour in the UK (apart from the obvious lack of an 'a' in it!) - so I use self-rising flour and add an extra teaspoon of baking powder. All my fairy cakes rise with a slight dome - I always saw the top off so I can ice them a la Nigella.
Could you experiment with a bit of extra baking powder?
mit x
PS: how many eggs have you got through with all this cooking!! LOL

melsy · 06/09/2004 20:01

oooh were in US are you mit??

aah so you can get dome , but is that with small ones ?? this is a 7" wide by 3" deep one !!!!

Ok so going to add more baking powder. Thats the other recipe I have from the domestic goddess book. On the front of the book is a lovely domed iced one and inside is a page of flat ones filled with icing. I just thought a big one would look better domed.

All's fine in the Dragon household bar a ruler injury sustained by DS2 I tried, unsuccessfully, to wean myself of MN. I have managed to force myself not to post on every thread now though.

I spent hours crafting a chocolate fudgecake Shawn the Sheep for DS1s 1st birthday so I know why you're doing this!

Metrobaby · 06/09/2004 20:13

Melsey - don't add more baking powder !!

According to my Mary berry cake book ...

Q."Why do cakes Sink?"
A. Too much baking powder
Oven door opened too soon
Under baking

I test my cakes using a chopstick - piercing it in the middle and seeing if it comes out clean. I also make it by dumping all the ingredients in a food processer and then pouring into a prepared tin. I followed Nigella's lemon maderia cake recipe and got the dome shaped cake. I ended up having to shave the top off anyway in order to decorate it

florenceuk · 06/09/2004 20:23

Melsy, doesn't Nigella have a buttermilk recipe for making a Barbie cake? This might hold up better. Do you want me to look it up? Sounds like you need something quite solid really, rather than sponge-like. I have a good one from Australian Women's Weekly as well.

melsy · 06/09/2004 20:49

Anything to help girls thank you , will try enything to get me bloomin dome !!!! Ok not going to add more powder , will mix in food processor using nigellas recipe and may be also try another recipe , all is not lost until Im on the 20th one and still not working !!!!!!!

LOL at your post soupy , have you gopt a picture of said cake ?? Why oh why do we do these things. DO you chnage after the 1st and by ready mades ????? I suppose i se the 1st as somethignreall special.

No - no cop outs here either. Actually, that's not strictly true - before ds1's 6th birthday my dad was very gravely ill, and dh insisted on ordering a cake from a shop to save me the trouble ... I felt so guilty! Daft isn't it?
