she loves veg and fruit would eat it all day but I need to get starch and fat down her

you could try a pasta salad with dry ingredients (like tuna or bacon)

coronation chicken is dd's only non dry sandwich that she will try (ggrrr and she won't have it often)

tis a pain

I let her eat lots of nuts at home

Will she eat hummous? If so she could have that with pitta bread? Or a bugsy sandwich - humous with grated carrot on nice bread.

Or a pitta stuffed with tuna and cucumber, or chicken and olives?

Onion bahjis? Pakora?

Couscous salad with grilled veggies and drizzle of olive oil?

Breadsticks with parma ham twizzled round the end?

Pasta and pesto salad (cooked pasta, finely chopped carrot, red onion, cucumber, celery dressed with a spoonful of nice pesto sauce).
