Red Pepper lasagne - it's a Weightwatchers recipe, but bascially you roast 4 red peppers until skins are black, cool in plastic bag then peel.
Fry an onion & garlic & some mushrooms, about 225gs I think. Add tin of tomatoes, tom puree. Put lasagne sheet on bottom of tray, then mixture, then more lasagne. Topping is approx half a pint of milk thickened with cornflour and a tub of very low fat soft cheese with garlic & herbs mixed in, and a little half fat cheese finely grated on the top. You can adapt that to make it less low fat.
DH is veggie so I do this one when we have friends round and it always seems to go down well with everyone.
Or Aubergene madras: Cut two aubergenes in half and spread 1 tsp of Pataks Madras curry paste on each half. Criss cross diagonally each one both ways to make diamond shapes but not cutting right through the skin. Roast in oven until soft. Meanwhile dry fry/fry an onion or two cut into chunks and a clove of garlic. When aubergene is soft but through the lines to make chunks. Add to the onion & garlic, add 5 fl oz water and some veg stock. Simmer rapidly for about 5 - 10 mins (add more water if it sticks. Then stir in 150g low fat total greek yoghurt and some chopped coriander.
