Healthy, veggie meal I can add to my weekly repertoire, one that won't make meat-loving dh retire to the shed in disgust?

The fabulous red onion tarte tatin in one of the Dellia books?

I have adapted it and use a variety of mediterranean vegetables instead of just onions.

Not especially healthy as it features puff pastry, but all those veggies....

pmsl at the fact that delia's recipes keep cropping up. it's cos she's such a 70s cook, when vegetarian meals were supposed to taste like meat - otherwise what's the point?
my recipe is in the winter collection, byt the way enid. but it's on the website as well. seriously though, use your own skill and judgement when it comes to following the recipe, i think it's more complicated than it wought to be.
i'm going to have a look at that tarte, blu. sounds nice if it's made with puff, can't be arsed cooking with shortcrust...

A recipe I got from the BBC vegetarian magazine years ago which is a real favourite with anyone who's tried it is leek and mushroom tart. I've long since lost the recipe but it's dead simple - a pack of chilled puff pastry rolled out into one large or four smaller circles, fry a couple of sliced leeks and a pack of mushrooms (again sliced) till soft. Mix in a dollop of marscapone cheese. Put leek mushroom mixture on top of pastry and top with cubes of dolcelatte/gorgonzola cheese. Cook at 180c for about 25mins.

Soup? For some reason my carnivorous dh has no problem with a soup that is meatfree - recent sucesses have been lentil and ginger, thai coconut and sweetcorn and butternut squash and apple - let me know if you want recipes

and lisalisa posted a great easy spinach and feta cannelonni style dish recently but made with rolled up lasagne sheets

Oh and Nigellas supper onion pie - caramelised red onions topped with cheese scone dough, baked then turned out upside down - absolutely delicious, very easy and INCREDIBLY filling

Nigella's pizza also quite nice, if bready. Gary Rhodes has some v good if fiddly risottos - tomato and spinach and some you do with barley in the oven instead. V yummy with green salad.
Tacos / burritos / enchiladas involving refried beans are v delicious and filling.

That does sound filling prufrock. I have had amazing success with lisalisa dish apart from that the lasagne sheets always break for me so I make a sort of lasagne sandwich rather than a roll. But considering that it has
a) no meat
and
b) spinach
it has gone down amazingly well with
a) DH
and
b) DS and DD
In fact we are having it tonight. I am also planning on making Delia's vegetarian goulash this week.

I also make quiches quite often and usually I will make one to eat and one to freeze - one will be veggie and one will have chicken or bacon in - DH's favourite is chicken and brocolli but he was also quite keen on a feta and leek one that I did.

I used to make Delia's risotto for spring which DH quite liked. It is not really a risotto but is made from brown rice with brocolli, cauli, spinach and topped with cheese and put in the oven. Problem for me is that the cauli and brocolli have to be cut up really small and I can't be bothered.

and if you don't fancy the idea of hot feta cheese i've adapted the recipe for use with cottage cheese of ricotta (same diff) and it's on the blog. it's an old slimming world recipe, i think.

I have done lisalisa's receipe with mozarella instead of feta - the DCs like the stringiness.

Prufrock - that sounds exactly like Delia's Red Onion Tarte Tatin...but with scone instead of puff pastry.
I use bought puff pastry - inc when I make it for veggies, as all the byugt pastry I have seen is veggie.

Good Housekeeping's Lentil Curry?

Fry an onion and two sliced carrots in 1-2tbps of Pataks (or similar) curry paste for about 10 mins. Add a tin of green lentils, 400-500g cherry tomatoes either tinned or fresh and 2ozs sultanas. Cook for about 20 minutes and then add half a bag of spinach and let that cook down. Serve with warm pitta or naan bread.

DH is veggie but I got the recipe from a friend whose DH is not veggie and will happily eat it.

Delia has a nice recipe for a vegetable biryani but it's a bit of a faff to make. Would he like nice baked beans made from scratch with potato wedges? I have a good recipe for beans. Or quiche?

i got this recipe from another mumsnetter and it has now part of my vege repetoire. ALl the family love even vegetable phobic 5 year old

Cowboy Hotpot
cowboy hotpot (a big family favourite) 1 onion, sliced 1-2 red peppers, sliced 2 carrots, chopped green beans, chopped 1 can baked beans 1 small can sweetcorn, undrained 1 tablespoon tomato puree salt & pepper cheese, cubed couple of potatoes, thinly sliced 2 tablespoons butter, melted american bbq spice (original recipe suggests 1 tbsp, we add about 3) 1. fry the onion. add red pepper, green beans and carrots 2. when those are softened, add baked beans, sweetcorn with liquid, tomato paste and season with salt & pepper. bring to the boil, then simmer for five minutes. 3. transfer the vegetables to a ovenproof casserole dish, and scatter the cubed cheese on top. 4. cover with the sliced potatoes, brush with melted butter and bake until potatoes are cooked and golden brown on top. i parboil the potato slices in my steamer. and i use a wok for the vegetables.

Have been making lasagne for inlaws ( meat loving+++) with quorn mince for years and they have no idea. Always eat 2nds and lots of compliments.
