How to spice up mashed potato?

How would sprinkling in some parsley do?

cheese?
a bit of pepper?
finely chopped onion and a egg (it cooks in the heat of the mash)

Mint or parsley.
Balck pepper
Cheese
Mashed parsnip or cauliflower. Kids don't notice.
Carrots to make orange potato
Broccoli to make scarey potato

I put a little dollop of mustard through mash,which isn't nutricious but is very delicious

boil potatoes, drain, add about a cup or 2 of milk and a couple of ounces of butter and bring back to the boil. Mash them and mix in a beaten egg and some scallions

ohhh yes lots of butter and warm but not boiling milk, then about a heaped tablespoon full of dijon mustard, taste and then add more if you like.

Alternatives

roasted garlic
lots of cheese
add caramelised onions and blanched cabbage to it (this is good with mustard mash)

I also love to add parsnip / carrot / sweet potato and lots of horseraddish to my mash as well

Since ds was very small, we regularly have what we and he calls 'orange potatoes' ... a Jamie Oliver special ...

Sweet potato
Carrot
Parsnip
Swede
Turnip
Leeks

boiled up together then mashed with a liberal dose of olive oil ... you can put pepper in it too, but we're noit great fans ....

DS doesn't like sweet potato, parsnip, turnip, swede, and leeks, and tells me emphatically that carrots are for rabbits - but he wolfs down orane potatoes ... funny that!

Incidentally, it's impossible to make a small amount, so we cook loads, and freeze the leftovers on family size portions - lazy cook, me!!

Potato cakes always go down well here...

Cook the potatoes and mash them earlier than you need to then leave to cool/put in fridge. When cold add a tablespoon of plain flour and whatever veg you fancy, diced up. We like sweetcorn, onion and red peppers atm. Make into little patties/cakes and fry for a minute either side.

Yummy.
