I'm not a veggie but try and cook two veggie meals a week

Some standard recipes ....

lots of red lentil soups/curries similar to this or Mary Berry's lentil curry with spinach (from her 'How to cook the perfect ..." book)

Nigella's double potato and halloumi bake (more than the sum of its parts and good without halloumi too) but doesn't look particularly elegant

Lots of soups: leek and potato is one of our favourites. Doesn't taste of much the first day but flavour really develops on day 2 and 3!

Nigella's sweet corn fritters dd loves these

Lots of bean burgers recipes here

Loads of home made pesto recipes using different green ingreds including parsley herb mix, broccoli etc (even saw chef make cabbage pesto on telly last night)

More for summer, but this is really simple and lovely here and very frugal ie goes a long way

greek style veggie kebabs with halloumi from Jamie Oliver

This is a good 'un gigantes plaki

Other home made bean recipes here

veggie home made pizzas (usually have with goats cheese)

bit of work but worth it kale lasagne to make in advance

In no particular order:

  • butternut squash risotto
  • chickpea curry
  • quorn escalopes with new pots and veg
  • thai curry with aubergine, green beans and baby corn
  • jacket potato as have a couple starting to look a bit sad
  • cauliflower pakora from HFW Veg Everyday (we tend to just eat a truck load of them and not bother with other stuff...)
  • have a Camembert that needs using up so may bake that on weekend
  • veggie sausages - dd will want with mash, i prefer as hot dogs

I have a remoska oven so I literally throw veggies in there with some pepper or spices - tonight it is onions, some quorn bits, cauli, french beans and a potato, and I'll add mushrooms to himself's dish as I hate them. Once all cooked, I'll probably add some cheese. And just have it as a casserole thing. On the side, some tomatoes with hummus.

I will also do curry, omlette with potato salad, chilli, veggie sausages and mash with veg, jacket spuds and a roast before this time next week.

Ooh we meal planned this week
Today we are having Lentil Shepherdess Pie, a Rose Elliot recipe I have been using for 30 years. With carrots, roast pots and parsnips, and gravy.
Tues remainder of pie, with home made oven chips and peas
Weds Stir fry veggies and sesame tofu or Quorn
Thursday
Mushroom Risotto
Friday
We are out but would be something from Leon Fast Vegetarian which was a Christmas gift

Saturday
Soup for Lunch
Cauliflower Cheese from Leon it's gorgeous!

Ooh I love a meal plan thread

Mine so far ( though I never stick to it) is

Monday- broccoli and blue cheese pie
Tuesday- sage and squash risotto or tomato and mozzarella risotto
Wednesday- arancini ( the best thing about risotto IMO ) and salad , followed by coconut rice pudding and mango
Thursday- stuffed onions from plenty
Friday- Hfw kale and mushroom lasagne

Monday - veg curry, rice, red onion and sweet potato bhaji and homemade naan
Tuesday - pizza, garlic bread, coleslaw, salad
Wednesday - can't remember
Thursday - spag and tomato sauce
Friday - quorn sausages, mash, peas, gravy
Saturday - eating out

Lovely jubbly thanks very much! Remembered there's a weekend of wedding festivities this weekend so only have DC to cater for fri-sun

Have tons of curry stuff in and an aubergine and some mushrooms to use up so that's one night, risotto, yay, always forget about risotto

Will go through all your other ideas, thanks chaps

Ooh not sure about rest of week. Tonight we had sweet potato, chickpea, spinach and lentil curry. So good!

Pasta with home made tomato and vegetable sauce
Cheese and onion tart with chips and baked beans
Jacket potato with cauliflower cheese

This thread is making me very hungry.

Sunday - black bean soup, nachos, homemade guacamole, homemade tomato salsa, pink pickled onions
This was an absolute triumph. It was the first time I'd made the soup and it certainly won't be the last.

Monday - lazy dinner of homemade wedges, Quorn steak style pies, frozen vege and gravy (Bisto)

Tuesday - veggie chilli, rice, salad

Wednesday - veggie bolognaise with (bought) garlic ciabatta

Thursday - lentil curry with hard boiled eggs, chapatis, salad

Friday - no idea

My meal plan is vegan as I'm doing Veganuary:

Monday: Aloo parathas and tarka dal
Tuesday: Gigantes Plaki (Butter Beans in Tomato Sauce) with salad and pitta
Wednesday: Shepherdess Pie with green vegetables
Thursday: Jambalaya
Friday: Sloppy Joes with corn on the cob and sweet potato chips
Saturday: Spinach and Basil Tofu Cannelloni
Sunday: Champignons et Légumes au Vin (Mushrooms & Vegetables in a Red Wine Sauce) with roasted potatoes and parsnips.

Our meal plan for the week is
Mon- quesadillas with refried beans, cheese and avocado salsa.
tues- bean chilli with bread and cheese (bit similar to yesterday, we needed to use up some peppers!).
Weds- kids eat at nursery so just Glorious soup, bread and cheese for me and DH.
Thurs- just me and DH again-?pasta with creamy mushroom sauce (takes 15 min).
Fri- Korean style noodles with assorted veg (Korean bit is a home made soy sauce based sauce - it's ace).
Sat- veggie toad in the hole (cauldron sausages) with assorted veg.
Sun- homemade veggie pizzas and shredded cabbage salad.

We're a bit carb heavy this week, I normally try and do more currys and stews but it's only the second week back, everyone's ill and I can't be arsed!
Plus, we have a baby under 1, so a lot of my favourites (feta salads, Kung pow or agedashi tofu, udon noodle soup) are too salty for her.

Baked potato

Pitta bread sandwich things filled with linda sausages, hummus, avocado, lots of veggies

Linda pies and mash potato and a mountain of peas

I am not veggie, but we eat about 70-80%veggie to keep costs down and it is really easy, especially with MN and online sources. Today I had fried egg and beans on toast for breakfast, veggie balti and naan for lunch and homemade veggie pizza with green salad for dinner.

We do indulge in snacks like battered onion rings and garlic mushrooms prepared in the air fryer, popcorn made in oil on the hob (we have a popcorn maker we originally bought for camping), cheese and crackers (DH and the kids as I cannot take cheese).

It's easy and fun.

Another meat-free day for me! Fry up of fried egg, beans, grilled tom, mushrooms and hashbrown for me. Lunch of minestrone and stir fry with bean sprouts and peanuts for dinner.

I usually cook a chicken in the slow cooker to use in meals and also a gammon or two packs of mince to use throughout the week.

'Leekytayto' soup w. Cheesy scones.
Vege moussaka.
Frittata (inc any unused veg!)
Stir fry.
Halloumi burgers or kebabs.

Onykahonie that is the best yet - I actually eat vegan about 85% of the time, family are omnivores but I mainly cook veggie at home.

Do you have your jambalaya recipe to hand? Haven't found a decent veggie version yet, one of the few dishes I miss meat from

Amantes - the idea of having cheese scones with soup is the idea of a genius. I am stealing it!

Black bean soup - it's not a recipe as such, as I made it up. Here's what I did:

half a butternut squash - diced fairly small
2 carrots and 2 onions - ditto
1 red pepper - ditto
Fry
Add cumin seeds, oregano. chipotle paste, loads of black pepper
Add splash of red wine
Add water
Cook until vege almost tender
2 tins of black beans
Mash most of them and keep some whole
Add to the soup
Cook until everything is all meltingly soft, bashing it around with a potato masher a bit
Add some chopped coriander
Serve with a dollop of soured cream and with loaded nachos.
