I am baking fresh tuna with lemon and garlic at the moment. its been in the oven 10 mins

The potatoes have been boiling for a few mins

I am also doing brocoli and carrots

Just realised that it will be very dry - how to remedy that please!

And also how long does tuna take to cook? Its wrapped in foil on 190 atm

The tuna won't need much longer. It depends how rare you like it. 20mins tops though. Do the broccoli and carrots in the last 3 mins. Don't boil them to death!

The lemon and garlic should make a nice sauce to pour over the tuna and the potatoes.

The tuna will probably be well cooked by now. I would just serve it with a bit of mayonnaise mixed up with lemon juice and lots of black pepper.

I have got mayo (I think) No black pepper though.

Just mix the mayo with lemon and that makes a sauce? I have to squeeze more lemons..... How thick should it be?

I am well pleased with myself. 3 days in a row ive been cooking!! Pizza sits uneaten in the freezer!

CAnt get the tuna out yet cause the potatoes arnt done

The mayo should be fairly thick just add the juice of half a lemon, it's just to go with the tuna as tuna can be a little dry. Take the tuna out and keep it warm until the potatoes are done.

It's actually nicer if it is a little undercooked. If it is overcooked it can be a bit like the tinned stuff.

That was soooo nice - and I cooked it!!! The kids have eaten it and are moaning for more brocoli and sauce (fantastic sauce idea btw!) Until a few days ago non of us had even tried brocoli and id never really cooked!!

Sunday I did a roast chicken
Monday - Tuna pasta bake - from scratch! even made the sauce (needs work though - there was something missing!)
Today - Fresh tuna in mayo and lemon sauce with mashed potatoes and veg

I have left to use...

Fresh cod
Diced chicken

Have lots of pasta, rice and potatoes
tomtoes, garlic, lemon (need to get herbs i think)

Ooooh I cant wait!!!

That's great Tamba, I am really enjoying you enjoying cooking as it is one of my greatest pleasure in life and it's nice to see someone 'getting it'

Tommorow you probably need to use the cod, what about a spicy tomato and cod and vegetable stew with rice. Or a fish curry, would the dc's eat that?

crispy cod bake
Preparation Time: 20 minutes
Cooking Time: 30 minutes

Serves: 2

Ingredients

175g (6oz) cod fillet
1 tomato, sliced
25g (1oz) fresh breadcrumbs
15g (1/2oz) half fat hard cheese
1/2 small onion, peeled and finely chopped
fresh parsley, chopped

Instructions

  1. Top the fillet with the sliced tomato and a mixture of the breadcrumbs, cheese, onion and parsley.
  1. Bake at 190c (375F, gas 5) for 20 - 30 minutes
  1. Serve with vegetables and boiled potatoes

That looks yummy!!!

Will need to get some bread crumbs, which I can do tomorrow. Does it have to be half fat chesse? I only have mayure chedder stuff (or some of that with the blue mould stuff in)

I have red and normal onions - does it matter which I use?

(Kids will eat whatever they are given or go hungrey )

I would use normal onion personally. You can make your own bread crumbs from a couple of slices of bread in the food processor (or more labouriously with a knife).

LOl Food processor!! I havent got one of them I have 2 pans, one bowl, 4 plates, a baking tray and a roasting tin - thats about it

i fired thick fingers of cod after dippign them in beathen eggt hjen corn flower gently fo about 5 - 10 mins
