So I have a couple of muffin tins.
Yesterday I made, very successfully I might add, apple and cinnamon spice muffins.
Today I bravely attempted to adapt Marslady's Lemon Dizzle recipe to muffins. I'm not sure it translates to be honest. Too many eggs I think, makes them too heavy.
Anyway, while I'm on a roll I wonder if there are any other super dooper, wouldn't go past, must try recipes out there?

I made Nigella's Carrot Cupcakes (from How to Be a Domestic Goddess) for DD's first birthday party - yum! Especially with the Cream Cheese Topping!

that nigella book has a bunch of good muffin recipes in it (Snickers muffins - yum!).

these are delicious, and really easy to make:

Banana Oat Muffins (Makes 8)

25g unsalted butter
3 tsp runny honey
2 large ripe bananas
100g plain flour
55g porridge oats
1 heaped tsp baking powder
0.5 tsp bicarb of soda
0.5 tsp cinnamon
75ml milk

Preheat oven to 190 degrees. Line a muffin tin with paper cases. Melt the butter and honey in a saucepan. Mix together all the dry ingredients in a bowl. Mash the banana and mix into the honey and butter. Add this mixture and the milk to the dry ingredients, stirring until mixed lightly. Spoon into the muffin cases. Bake for 25 minutes until golden brown and firm to the touch.

Damn you fish! I had managed to avooid one soupy had planted on another thread and I so wasn't expecting it from you. grrrrr

The basic Delia recipe in the Summer cookbook is good, just add what you want to the mixture as long as it weighs about the same as any of her fillings. We like carrot, raisin, sunflower seeds and mixed spice. Havn't made them in ages though a must do for tomorrow methinks

Xena - here it is
Apple Spice Muffins
9oz 225g Plain flour
3 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoon of cinnamon
4-5 oz 110-140g white granulated sugar
1 egg
6oz 170g finely chopped apple such as Granny Smiths
5 fluid oz 150ml milk
3fluid oz 90ml vegatable oil or 3oz butter melted
2-3 oz raisins, sultanas or walnuts

optional topping
3 tablspoons soft brown sugar
2oz walnuts

makes 10-12
put cases into pan and heat oven 190-200c or gas mark 5-6
In a large bowl mix all dry ingredients
in another bowl beat egg add milk apple and oil
pour wet ingredients onto dry stir then combine fruit and nuts it is quite dry as apple releases moisture as it cooks
spoon into cases sprinkle with topping if using
bake 20-25 mins
until just golden brown and springs back when gently pressed

HELP mixture seems quite wet?

Muffin mix is fairly wet, but if you think its too wet just add a bit more flour

MamaG, I have often thought that muffin mix didn't look too great, kind of gloopy, just hoped for the best - and it always seems to work out!

Made blackberry muffins this week and they were really lovely - that was from the Susan Reimer book. Usually go for half wholemeal, half white flour and they go down well in this house.
