So I have a couple of muffin tins.
Yesterday I made, very successfully I might add, apple and cinnamon spice muffins.
Today I bravely attempted to adapt Marslady's Lemon Dizzle recipe to muffins. I'm not sure it translates to be honest. Too many eggs I think, makes them too heavy.
Anyway, while I'm on a roll I wonder if there are any other super dooper, wouldn't go past, must try recipes out there?

Okay I think I have found the ultimate lemon curd muffins - they have raisins and coconut in the too!
I thought I might add a dollop of lemon curd to the centre of them while they are cooking too, just to make them EXTRA special. Although I read a recipe on Cappucino's website that when using fruit it's a good idea to use fruit juice instead of milk i.e. orange juice in orange ones, apple juice in apple ones and so on.
If I put lemon juice, zest and curd and no milk in them, would they be too lemony?
Is that possible??

MDL DS1 loves Lemon but when I make cakes for him with lemon in and lemon icing other people think they are to lemony, I don't know if this would be the same as muffins though.
Tried blueberrie muffins today as well as the apple ones but there were too many blueberries in them so they didn't hold together at all. All the other recipes I look at had the roughly the same quanties though?
Anyway I want to find a good carrot cake muffin recipe.
I'll be using that website Cappuccino when I get my american measure!

I make black forest muffins .. I just use the frozen fruits you can buy and reduce the milk a little .. yummy

Xena, what was the recipe you used for the blueberry muffins? How many ozs fruit in the mix to make a dozen?

The Susan Reimer book has lovely recipes for carrot muffins, carrot and pineapple (gorgeous) and orange-carrot. Very good book!

just add 3 oz dried fruit (like blueberries) and add 10ml more milk (approx) to basic muffin recipes

I used fresh blueberries and the recipes said 6oz double what twiglett says!

sounds about right .. dried absorb the moisture of the cake mix and expand ..

Xena, the recipe is right, 5-6 ozs of any fresh summer fruit.

Will remember your tip about the dried fruit and milk, Twiglett, when I come to using the dried cranberries I know are hidden somewhere in the baking cupboard

gosh not too sure about the muffin heaven website - i fancied the pineapple one and one of the ingrediants was 'vanilla pudding' which i am assuming is angel delight....ewwwwww

the peacan and yogurt muffins from Pret are divine recreated them at home and they were fab, have eaten way to many!!!

Did Snickers muffins for a bake sale, worked a treat (Nigella- domestic goddess, snickerdoodles) but didn't taste myself: far too many calories. Dh and boys liked them though
