What do you put in your potato salad?

I need to do a potato salad for a family get together, but don't want it to be too boring. So far my ingredients list is:

Jersey new potatoes
Mayonnaise
Chives?
Salt and pepper

Does that sound right so far and what else can I add, if anything? It can't be too "out there" because my elderly parents are coming and they seem to be getting fussier by the day.

I use a mix of mayo and salad cream, spring onions, splash of worcestershire sauce and a teeny dash of tabasco.

Now I'm hungry!

I think they may prefer mayonnaise, but that recipe has mustard and spring onions in, which would be lovely. So that's 2 votes for mustard.

Gherkins may be a problem. For my parents I think that would be classed as exotic.

yes, my grandma is German and therefore my other grandparents classed her as exotic - tis her recipe....

I'm doing the slow cooker gammon recipe too. Last time I used molasses sugar instead of normal brown sugar and it was gorgeous.

I'm fairly sure I've got Tabasco and Worcestershire sauce, so I can experiment a bit.

Smoked bacon and chives or spring onions. Lots of black pepper.

I do Jamie's ministry of food one which uses plain yoghurt instead of mayo. (Egg allergy).

I tend to tone down the mayo by doing half and half Mayo and Yogurt, and some mild vinegar. But mine also has Gherkins in it (another German). And onions, plus lots of fresh herbs: chives and parsley. People rave about it Blush and I have to do it for every BBQ gathering now....

Mine is half mayo and half low fat creme fraiche, finely chopped capers, cocktail gherkins and dill. This has made me want it for dinner with salmon. Yum.

Oh this is perfect, I need to make a p-salad soon!
We always put sweet gherkins in (pickles).
I was wondering about a little grated raw cabbage, too.

It's much nicer with salad cream!

Sping onions, chives and black pepper. Dd and I could live on it and, best of all, I always make enough for the four of us and dh and ds don't like it!

I do 2/3 mayonnaise to 1/3 double cream, and add a squirt of lemon juice. Then spring onion and chopped hard boiled egg, plenty of salt and pepper. And I use new potatoes if I can get them.

I find it really nice and simple with just mayo, chives, potatoes and spring onions.

But yes bacon, mustard, all of those things are yummy in it too.

Best recipe is Barefoot Contessa, it really is delicious:

Ingredients

3 pounds small white potatoes
Kosher salt
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
Freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped red onion

Directions

Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.

Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside.

When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

But you can omit bits or just make up your own version. I use a yoghurt/mayonnaise combination as I think mayonnaise is too rich and clarty on its own.

I make 2. One is the warm potato salad that RoganJosh mentioned. It's really delicious.

The other has a dressing made with mayonnaise, mustard and thinned out with olive oil. It also has capers, red onion and dill.

My recipe is pretty close to yours (I can't stand mustard being the main reason) but with chopped up hard boiled eggs in too. Yummy!

I do exactly the same as you but with a splash of white wine vinegar to cut through the mayo a bit.

Can't believe that nobody uses soured cream - it's delicious, mixed about 50/50 with mayo - add a splash of the vinegar from the gherkins (or lemon juice if no gherkins in!), sliced gherkins themselves, salt, pepper and chopped chives - Mmmmmmm

That sounds lovely Denzal. I love dill and my husband loves celery, so that sounds perfect. In fact I think the parents like celery too, so it could be a winner.

It also gives me a chance to use my brand new measuring cups.
