What do you put in your potato salad?

I need to do a potato salad for a family get together, but don't want it to be too boring. So far my ingredients list is:

Jersey new potatoes
Mayonnaise
Chives?
Salt and pepper

Does that sound right so far and what else can I add, if anything? It can't be too "out there" because my elderly parents are coming and they seem to be getting fussier by the day.

Mayo, lemon juice, gherkins, red onions, dill, salt and pepper. Only ever really serve with ham or sausages. Under German potato salad instruction here also Grin

I love the sound of slow cooked gammon in molasses. May have to pop to the supermarket later...

Mix of salad cream & mayo, very finely chopped red onions and sometimes finely chopped gherkins. My sister made one at the weekend with flavourless mayo & chives & it was horrible compared to mine Grin

Mayonnaise, sometimes with a bit of salad cream (or vinegar if no sc), or yoghurt
Onions fried with garlic
Tinned sweetcorn

I thin the mayo a little with yoghurt, or sour cream or fromage blanc or whatever of that type of thing is in the fridge, add mustard or horseradish, black pepper, chopped herbs (I like dill) chopped spring onions and capers.

For a light lunch I sometimes stir in some flaked smoked trout or mackerel.

baby new potatoes, cooked until they are properly soft and then peeled (skins just slip off)
Chopped boiled egg that is still mudgy in the yolk
Mayonnaise
Lemon juice
Salt & pepper
Chives

I serve it warm. Never chill potato salad in the fridge, it loses all flavour and just becomes a cold slimy thing.

For anyone interested I used a 500g pack of Billingtons molasses sugar. Wonderful and so easy to do.

So much choice and they all sound delicious!

I like the idea of using something like crème fraiche to dilute the mayonnaise a bit.

potatoes, roughly chopped hard boiled egg, half mayo/creme faiche, crushed garlic, finely chopped red onion, salt and pepper.
Mix the mayo/CF, garlic, onion and egg together and season well before using to dress the potatoes.

Little bits of crispy bacon
Almonds toasted in the remaining bacon fat then roughly chopped. Gives a nice crunch texture.
I agree, thin the mayo with yoghurt. Makes a lighter dish.
I sometimes put chunks of smoked Polish sausage or frankfurters in instead of bacon.
