Here's the previous thread where it all began!

EatBetterers are trying to improve the diets of ourselves and our families. No weighing, restricting, calorie counting etc - just finding joy in nourishing ourselves by making positive changes one step at a time. All welcome! :)

Could I ask a few of you lovely people, to post some of your favourite super healthy breakfast, evening meals and snacks in a list. I have to shop tomorrow or Saturday and I just can't get the time to read the whole thread, every time I try something comes up. I really want to do his properly. I've even managed to negotiate a buffet tonight and only eat the right things, thats a first for me and I need to keep that up.

fuzzpig · 24/04/2014 22:28

I actually need to write a list too - will attempt after work tomorrow (I may need reminding!). I want to compile a list of everything I can cook, so that I can meal plan more easily.

Well done bramshott! That shows great awareness. I've been surprised by myself sometimes, when I've actually noticed that I'm really not enjoying something like I thought I would. Just need to get to the stage where I can not order it in the first place!

And hello Agent too :)

Apologies if I'm missing anyone, iPod/safari not playing ball tonight Confused

My favourite snacks are:
Oatcakes with full fat cream cheese and lime pickle
Carrot sticks with hummus
Small handful of almonds
Full fat natural yoghurt with a sprinkle of berry granola

Will keep thinking!

fuzzpig · 24/04/2014 22:56

My breakfast is pretty much always the same now - two boiled eggs with one slice of nice wholemeal seeded bread and butter. Treaty breakfast is French toast with cinnamon sugar and strawberries :o

Can I just ask is Greek yoghurt and natural yoghurt the same thing? DH likes Total but I can't stand it even when sweetened with fruit and honey. Too sour. Is there anything gentler that isn't full of added stuff?

I do my main shop in aldi, fuzzpig and like their Greek yoghurt. I don't find it sour but it may be an acquired taste. I do tend to mix a drop of maple syrup in and some fruit, or I have it with my homemade mueseli which has dried fruit in so it's slightly sweet. You could always try it with some maple syrup or honey or fruit spread and reduce the amount as you get used to the yoghurt? Most of us are over exposed to hidden sugars I think, which males it hard to eat foods in their natural form.

I like the idea of a list of meals.
Breakfasts, I usually have homemade mueseli, or Greek yog with banana and maple syrup. Sometimes I have toast from homemade bred, with peanut butter (the kind that's just peanuts).
Occasionally we have pancakes with fruit. Either normal ones made with wholemeal flour or I mix banana, ground almond, and an egg and make a sort of scotch pancake out of that.

Lunch, usually something eggy and bready, scrambled with spinach, soft boiled, poached, eggy bread etc. I've cut downburgersing one slice of homemade bread instead of two. I COULD eat two but I actually don't need to! Usually add salad sticks to this as well.
Sometimes its leftover dinner from the night before, or homemade soup.

Dinners are where I struggle. I dream of coming up with amazing, nutritious meals but fail a lot! We tend to have things like pizza, baked fish, burgers, pasta, stews etc. I always make everything from scratch, I tend to bulk meals out with legumes and lots of veg and serve 3 or 4 veg with each meal. I like the Girl Called Jack recipe book for quick, easy meals that taste amazing, though I tend to use wholemeal rather than white everything

fuzzpig · 25/04/2014 09:43

Banana and almond pancakes sound amazing! Can you please post the amounts of each, I'd love to try that :)

I too am finding I don't need two slices of toast. It was just habit to have one slice per egg before but it was easily broken. I also never have bread with soup anymore, again it was just habit and now I don't miss it. Quite often there are potatoes or rice noodles in the soup anyway, that's plenty of carbs as it is.

OP posts:
AgentSchraeder · 25/04/2014 09:55

Good point about the soup having enough carbs without the bread, fuzzpig, another habit I need to rethink!

The pancakes, I'm afraid I'm a bit slapdash and make it up as I go along! I would mash or blend one banana, with one egg and a couple of heaped spoonfuls of ground almond. Then just do splodges into the pan and fry in coconut oil or butter. But you might have to experiment a little.

fuzzpig · 25/04/2014 11:59

Ok thanks 'll give it a whirl. I was planning on getting ground almonds anyway as I'm hoping to try a bit more gluten free baking (DH is coeliac) :)

I have wondered about greek yoghurt too - I often see it referred to as the 'best' type but here we tend to have organic wholemilk natural yoghurt because that's what the DDs prefer as it's runnier.

DameDiazepamTheDramaQueen · 25/04/2014 12:37

It tastes different, I think Greek Total yoghurt is strained and made from sheep's yoghurt rather than 'plain' yoghurt which is cow's milk iirc.

I would like to join - my ds1 (17) has actually driven the change to healthy eating in our house. He is wanting to get fit and build lean muscle.

I need to lose about two stone + and ds1 is on the heavy side but still growing of course so the change to healthy eating won't hurt him.

The sort of things we are eating are

breakfast (as before) weetabix or shreddies with semi skimmed milk

at weekend or for mid morning eggs with wholemeal

all pasta, rice and bread has been changed to brown/wholemeal/granary

and for dinner lean protein with lots of veg or chilli, bolognese with brown rice/pasta

no ready meals or white carbs. Lots of water.

We've been doing this for three weeks now - I have lost some weight but the main thing I have noticed is that my bloating has gone down considerably.

Ideas for recipes welcome

AgentSchraeder · 26/04/2014 10:53

I'm at my parent's this weekend so its damage limitation more than anything. I've just weighed myself though which made for depressing reading. Have closer to two stone to lose, not one :(

DameDiazepamTheDramaQueen · 26/04/2014 12:54

Agent,I don't weigh myself,I go by how I feel and how loose clothes are getting. I know I have weight to loose,I don't need to depress myself further by exact numbersGrin

I made Moroccan chicken with lemon cous cous last night, really tasty and very quick.

AgentSchraeder · 26/04/2014 13:00

DameD, I don't usually weigh myself, I don't own scales, I just weighed on my mum's so I could see where I'm at. I'm glad I did as it was worse than I thought so its more of a push to carry on

Sleepwhenidie · 26/04/2014 13:52

Hi everyone and welcome to all the newbies /delurkers! I have been meaning to come on with recipes but never seem to have time to type stuff out. I am do some links [ smile]. Last night's dinner was hot and sour soup with is delicious and always feels super healthy and nourishing especially good as I was hungover but we'll gloss over that Smile

Had poached duck eggs and asparagus for breakfast, the eggs were nice but not sure as good as our usual ones. The very white whites don't look as appealing do they?

I passed my final exam this week and am now a certified Eating Psychology Coach...now all I need is some paying clients (and website, business card, Facebook page etc [ hmm].

DameDiazepamTheDramaQueen · 26/04/2014 14:05

Congratulations sleepThanks

Hi everyone, I've been lurking and following this thread and the last one with interest.

I could do with motivation to stick to a healthy diet. I have a 2.5yo DS, a 3 month old one, who I'm bfing and study part time too (have an upcoming psychology exam in 2 weeks time). I'm feeling especially crap today as I've caught the toddlers cold and the baby decided 3am was a good time to yell for an hour. I managed to do a decent enough lunch, homemade brocolli soup, cheese, toast and salad followed by vegan banana bread and grapes but missed breakfast.

I really struggle with breakfast as I either miss it or occasionally sleep through it if Dp gets up with the boys. I'd love fast, healthy ideas for it - eggs and most mueslis are out as I'm allergic to eggs and nuts.

AgentSchraeder · 26/04/2014 14:24

Congratulations, sleep! Can I ask what is an eating psychology coach does?

Sleepwhenidie · 26/04/2014 14:33

Thanks Agent - I guess the easiest way to explain it is a type of health coaching. My aim is to get clients to have a healthy relationship with food and body, to move away from diet mentality, help if you have issues with emotional eating, over-control with food, yo-yo dieting, chronic fatigue, digestive issues or mood...from nutrition point of view I may tweak clients' diets to see what could be achieved through dietary changes but also work as a counselor to address self-esteem, body image, stress levels etc. Smile

enormouse - welcome! Sleep deprivation is a killer, I'm impressed with your lunch given the night you had! Re breakfast, the key is probably to think 'outside the box' and not just consider traditional breakfast foods. Are you actually vegan/vegetarian? I sometimes have smoked salmon and avocado or avocado and chilli mashed on a slice of toast. A smoothie with banana, chia seeds, fruit and greens might be a good option too?

Sleepwhenidie · 26/04/2014 14:34

Oh and thanks Dame Grin

Rummikub · 26/04/2014 14:58

Well done sleep! Wine

I'm liking the lists of healthy meal ideas, esp the quick ones.
