Exciting veggie option to go with roast beef dinner...?

Help! Hosting Mother's Day on Sunday (obviously!) and need a veggie option to go with the roast beef that's waiting in the freezer, will be doing the whole Yorkshire puds, roasties etc. to go with.

I can't think of anything other than boring nut roast or even more boring veg toad in the hole really...any ideas gratefully received please!

Thanks all, mushroom Wellington sounds good to me, although dm has a slight lentil fetish so the lattice could be the way forwards!

lentil lattice foodfrom4.com/2012/05/19/lentil-and-feta-cheese-tart/ this is pretty close to the original. You can use a Cheshire/Lancashire/Wensleydale cheese if you prefer.
