Does anyone bake with spelt?

I have any number of recipes but I'd rather have one off someone who says it actually works than putter about on the internet

& would you use a breadmaker or do it in a kenwood - I have sore hands so I won't be kneading much

I make bread with spelt flour in the breadmaker but it involves no more work than any other flour, I'm not sure how it works if you're a proper baker!

I have a recipe I make by hand for a loaf which is half and half regular bread flour and spelt. It's yummy. I have no idea how to convert things for a bread maker though.

It's a panasonic, I just use the recipe that came in the booklet, I'll copy it out later for you. :)

My spelt bread is whirring round in the breadmaker right now.

I use:
1 1/4 tsp dried yeast
375g spelt flour
125g white bread flour
1 tsp salt
1 tbsp olive oil
400ml water

I tried various proportions of spelt to white flour - more than this and I find it's very solid, less and you don't taste the speltyness.

My neighbour has baked an all spelt loaf, and it was edible....until it went cold! Then it went rock hard. Can it be mixed with something other than white flour?

I make spelt bread in my machine and use it in place of normal flour in other recipes (with baking powder if SR is required)

1tsp yeast (buy the stuff for breadmakers)
1 1//2 tsp salt
1tsp sugar
400g white spelt
5g butter (I use olive oil)
260mls water

This is for a medium loaf, my machine has a spelt setting, through cycle is 4.5 hours.

It is lower in gluten, I avoid wheat but can tolerate spelt ok.

No dairy, egg, coconut, almond, onions/garic, green veg (except green beans - bizarrely), pulses & now gluten

Well spelt bread should be ok, I enjoy it. I am dairy free (mostly) too, its ok once you get used to it.
