How do you pimp up your mash?

I absolutely love mash potato. I feel that I shouldn't always mash them and leave the lovely little things looking nice and round and smooth but I can never resist! Just looking for ideas on how to pep it up a bit for more variety, thanks

Spring onion mash, leek mash, garlic mash, pesto mash (red pesto mash is especially good stuff).

Colcannon, Champ, I could go on...

omg - wholgrain mustard mash is AMAZING with pork loin or chops. Just stir in a couple of tablespoons with all the butter, taste, add more if necessary. yum.

Caramelised onions stirred in
Chargrilled red pepper and chopped black olives and a glug of xtra virgin oil.
Butter milk and chopped scallions: ie champ
Soft goats cheese mashed through and then grilled in the oven

Butter, a bit of milk, leek (cooked in butter first) and bacon. Delicious.
DP makes mustard mash, which is also very nice.
