What can I do with a couple of large courgettes ?

They need using up, I was thinking maybe a courgette and potato soup. Does anyone know a naice recipe for it ?
Will 2 courgettes be enough ?
There is only me and the Dts who are 3.
I also have an aubergine and lots of peppers so could do something Mediterranean like. I would be really grateful for any other suggestions.
Preferably semi healthy as I am still kidding myself that I am going to lose weight this month

Yes I like the sound of a lemon chicken casserole. I have never made a nice one, it always looks like cat sick.

I basically use the slimmingworld lemon, galric and
Chicken casserole which can be found on the slimmingworld website. However I use courgettes instead of green beans as I hate green beans and find the courgettes make the dish more to taste.
